Thoroughly wash the scallions under running water and pat them dry. Finely chop them into approximately 0.5cm pieces. Chopping them thinly will ensure they cook evenly and avoid being too tough.

Heat a non-stick pan over medium-low heat. Add 1 tablespoon of perilla oil and 1 tablespoon of cooking oil. Once the oils are lightly shimmering, add the chopped scallions. Gently stir-fry for 1-2 minutes until the scallions become fragrant and slightly wilted, being careful not to burn them.

Once the scallions are softened, gently push them to one side of the pan to create space. Carefully crack the 3 eggs into the cleared area, allowing the whites to touch the pan and begin cooking.

When the edges of the egg whites start to turn opaque (after about 1 minute), reduce the heat to very low and cover the pan with a lid. Covering the pan helps the top of the eggs to cook gently, resulting in a moist and tender soft-boiled texture.

Continue to cook over low heat with the lid on for another 1-2 minutes. The key is to cook just until the whites are set but the yolk remains beautifully runny and jammy. Avoid overcooking, as this will make the yolk firm.

Drizzle evenly with 1 tablespoon of sesame oil, 1 tablespoon of tuna extract, and 0.5 tablespoon of soy sauce (if using). Finish by sprinkling 1 tablespoon of toasted sesame seeds over the top.
