  • 1 bunch of scallions (approx. 50-70g)
  • 500ml water
  • 1/2 tsp salt (for blanching scallions)

First, let’s prepare the delicious seasoning for our scallion and Gim salad. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp Korean soup soy sauce, 1/3 Tbsp red pepper flakes, 1/3 Tbsp sugar, 1/2 Tbsp minced garlic, and 1 Tbsp corn syrup. Whisk everything together until well combined and the sugar has dissolved. This will be your flavorful dressing.

Now, let’s prepare the Gim and scallions. Lightly toast the 5 sheets of Gim over medium heat on a dry pan, flipping once. Be careful not to over-toast them until they become too brittle. Once toasted, crumble the Gim into bite-sized pieces (about 2-3 cm) and place them in a mixing bowl. Clean the bunch of scallions and pat them dry. Bring a pot of water to a boil, add 1/2 tsp of salt, and blanch the scallions for about 15-20 seconds. Over-blanching will make them mushy, so aim for a slightly crisp texture. Immediately rinse the blanched scallions under cold water to stop the cooking process. Drain well and cut them into 4-5 cm lengths. Add the cut scallions to the bowl with the crumbled Gim.

It’s time to mix everything together! Pour the prepared seasoning over the scallions and crumbled Gim in the bowl. Gently toss and mix using your hands, ensuring the dressing coats all the ingredients evenly. Be delicate when mixing to avoid breaking the scallions too much. The crumbled Gim will absorb the dressing, enhancing the overall flavor.

Finally, let’s add the finishing touches for an aromatic boost! Drizzle 1 Tbsp of sesame oil over the mixed salad and sprinkle 1/2 Tbsp of toasted sesame seeds on top. Give it one last gentle toss.
