For the best flavor, ensure the batter isn’t too thick and generously add eggs for a rich taste. The soft texture of the egg combined with the aromatic scallions creates a delightful dish, perfect for brunch or a snack.

  • 40g Vegetable Oil (neutral oils like canola or grapeseed)
  • 4g Salt (essential for enhancing flavor)
  • 40g Sugar (the main ingredient for sweetness)
  • 100g Eggs (for the batter, about 2 eggs)
  • 160g Milk (for a tender texture)
  • 1 bunch Scallions (finely chopped, also for topping)
  • 3 Eggs (main topping for the bread)
  • 4 Quail Eggs (optional, adds a cute touch with the chicken eggs)

Cooking Instructions

First, in a large bowl for making the bread batter, crack in 100g of eggs (about 2 eggs). Add 40g of sugar and 4g of salt. Use a whisk to gently mix until the sugar dissolves.

Once the sugar and eggs are well combined, add 40g of vegetable oil and 160g of milk. Whisk again until the liquid ingredients are fully incorporated and blended.

Now it’s time to add the dry ingredients and complete the batter. Sift 180g of cake flour and 4g of baking powder together into the bowl. Sifting prevents lumps and results in a smoother batter. Gently mix with a spatula or whisk until no dry flour streaks remain. This will create a moist and tender egg bread batter.

Let’s add the fragrant scallions to the simple batter! Add about 1 bunch of finely chopped scallions to the batter. Remember to save some chopped scallions to use as a topping later!

Now, let’s prepare the baking pan. Line a 1-go size round pan with parchment paper. Parchment paper prevents the bread from sticking to the pan and makes it much easier to remove. Pour about 2/3 of the prepared batter into the lined pan. It’s important not to pour all the batter; set some aside.

It’s time to add the egg topping over the batter. Carefully crack 3 fresh eggs onto the batter. If you like, you can add 4 quail eggs for a cute touch. To prevent the yolks from breaking prematurely, gently poke them with the tip of a toothpick or fork. This helps the eggs cook more evenly and maintain a pretty shape.

Now, we’ll use the reserved batter to cover the eggs. Carefully pour the remaining batter around the egg whites, as if gently embracing the eggs. This creates a beautiful pocket for the eggs within the bread.

Finally, add the fragrant scallion topping. Arrange the previously chopped and saved scallions attractively over the eggs and batter. You can also customize your egg bread with other favorite ingredients like ham, cheese, or corn! If you desire a stronger flavor, lightly sprinkle a pinch of salt and sugar on top before baking.

With all preparations complete, place the pan into a preheated oven at 180°C (350°F) and bake for about 50 minutes. Baking times can vary depending on your oven, so check the bread periodically and adjust as needed to achieve a golden brown color. A skewer inserted into the center should come out clean when it’s done.
