How to Make a Delicious Zucchini Pancake with Dried Shrimp
I had a zucchini and wondered what I could make with it quickly. I thought a savory pancake with dried shrimp would be delicious, so I decided to julienne it and make this pan-fried dish. ^^
Ingredients
- 1/2 medium zucchini (about 340g)
- 20g dried small shrimp
- 80g pancake mix
- 80g tempura flour
- 1 medium onion (about 140g)
- 1 large egg
- 1 Tbsp fish sauce (or soy sauce)
- 250ml water
- Olive oil (or cooking oil)
Cooking Instructions
Step 1
First, peel the onion, wash it thoroughly, and then thinly julienne it. Julienne onions add a lovely sweetness and depth to the pancake as it cooks.
Step 2
Wash the zucchini well, trim off the ends, and then use a julienne peeler or a knife to cut it into thin, even strips. Using a julienne peeler ensures uniform thickness, which makes for a tender pancake. (If using a knife, aim for very thin cuts.)
Step 3
In a large mixing bowl, combine the julienned onion and zucchini with the dried small shrimp. You don’t need to soak the shrimp; using them dry will enhance their unique savory flavor and texture.
Step 4
Now it’s time to add the batter ingredients. To the bowl, add 80g of pancake mix and 80g of tempura flour. Crack in 1 large egg for binding and richness. For added umami, add 1 tablespoon of fish sauce (or soy sauce), and then pour in 250ml of water (about 1 cup) to achieve the right batter consistency.
Step 5
Using a spatula or spoon, mix all the ingredients together until well combined. Stir until no dry flour is visible and everything is smoothly incorporated. It’s important to mix thoroughly for an even batter consistency. Adjust with a little more water or flour if needed.
Step 6
Heat a frying pan over medium heat and add a generous amount of olive oil (or your preferred cooking oil). Once the pan is heated, ladle about a portion of the batter into the pan, spreading it gently into a round shape. Cook for about 2-3 minutes until the bottom is golden brown and crispy. Carefully flip the pancake using a spatula and cook for another 1-2 minutes until the other side is also golden brown. Your delicious zucchini pancake with dried shrimp is ready!
