How to Make Tuna and Enoki Mushroom Pancakes (Flourless)
We’ve made delicious pancakes using canned tuna and enoki mushrooms! This recipe is entirely flourless. They turn out wonderfully crispy and are perfect as a snack for kids or a tasty appetizer for adults. Enjoy this flavorful and nutritious treat made with simple ingredients!
Main Ingredients- 1 can tuna (drained)
- 1 pack enoki mushrooms (trimmed)
- 2 eggs
- 1/2 red chili pepper (seeds removed, finely chopped)
- 1 green chili pepper (seeds removed, finely chopped)
- A little cooking oil (for frying)

Cooking Instructions
Step 1
First, prepare all the ingredients for the pancakes. Although the picture shows one egg, using two will result in a softer and more delicious pancake.

Drain the oil completely from the canned tuna. It’s important to thoroughly drain the tuna, as any remaining oil can make the pancakes greasy.
Step 3
Trim about 1-2 cm from the root of the enoki mushrooms and cut them into manageable pieces, about 3-4 cm long. Finely chop the red and green chili peppers after removing the seeds. In a bowl, combine the drained tuna, chopped enoki mushrooms, and chopped chili peppers. Add the 2 eggs and a pinch of black pepper, then mix well to create the batter.
Step 4
The batter is now complete! All ingredients are well combined. You’ll love the combination of the crunchy enoki mushrooms, savory tuna, and slightly spicy chili peppers.

Heat a lightly oiled pan over medium-low heat. Spoon about a tablespoon of the batter onto the pan, shaping it into small, flat pancakes. Since these pancakes are flourless, they can be fragile. Cook one side until golden brown, then carefully flip them using a spatula.
