Make a Mild Tuna and Egg Fried Rice, Perfect for Kids’ Menus
With the kids on vacation, lunchtime menus are another homework assignment! Fried rice is one of the easiest and quickest dishes to make, so it’s a frequent go-to. I’m trying to incorporate a variety of ingredients lately. This time, I decided to make a mild fried rice using tuna. Let’s get started on making this delicious tuna and egg fried rice, perfect for kids!
Ingredients- 2 Eggs
- 2 bowls of Rice (warm)
- 1 small can of Tuna
- 1/4 Onion
- 1/5 Carrot
- 1/5 Zucchini
- 1 stalk of Green Onion (white part)
Cooking Instructions
Step 1
First, prepare the vegetables for the fried rice. Using a food processor or a knife, finely mince the carrot, onion, and zucchini so they are easy for children to eat. Mincing them finely like this helps even picky eaters consume vegetables without objection.

Actually, this recipe was initially inspired by ‘rolled omelet rice’. The key point is to mince the vegetables as finely as possible so children won’t pick them out.

Crack 2 eggs into a bowl and add the finely minced vegetables. (Note: The original recipe used 4 eggs, but I’ve adjusted to 2 eggs considering the amount of rice and tuna. If you prefer a richer egg flavor, you can increase the number of eggs.)

Add about 0.3g (a very small pinch) of salt to the egg mixture and lightly season. Be careful not to add too much.

Drain the tuna can thoroughly to remove excess oil, then add it to the egg and vegetable mixture. Properly draining the tuna oil prevents a fishy smell in the fried rice.

Add about 1.5 bowls of warm rice to the egg mixture. (Since the total rice amount is 2 bowls, the remaining 0.5 bowl can be added while stir-frying.)

Mix all the ingredients well using a spatula or spoon. It’s important to mix so the egg coats the rice grains and other ingredients evenly. (Note: The original recipe used more eggs with the intention of making rolled omelet rice. For fried rice, adjusting the egg quantity helps the rice and ingredients blend better.)

To make scallion oil, finely mince only the white part of the green onion. Finely chopped green onions add a fragrant aroma to the fried rice.
Step 9
Heat cooking oil in a pan over low heat. Once warm, add the minced green onion and slowly create fragrant scallion oil. Cook until a gentle aroma rises, being careful not to burn the onion.

Once the scallion oil is fragrant, add the prepared egg and rice mixture to the pan and begin stir-frying.

While stir-frying, add 1/2 tablespoon of oyster sauce for a savory flavor. Oyster sauce not only seasons the rice but also enhances its aroma. (Adjust seasoning to your preference.)

Stir-fry gently with a spatula, without pressing down the rice grains, until the eggs are cooked into soft curds and the rice is fluffy and slightly dry. Maintain medium-low heat while cooking.

Just before turning off the heat, add 1/2 tablespoon of sesame oil and a pinch of sesame seeds, and give it a final quick stir. This infuses the rice with the nutty aroma of sesame oil from the residual heat.

If you serve this with a drizzle of ketchup or a side of their favorite ham, kids will happily finish the whole bowl! This tuna and egg fried rice is simple yet so appealing.
