Ingredients for Savory Chicken Breast and Scallion Stir-Fry

  • 2 packs chicken breast (approx. 400-500g), cut into bite-sized pieces
  • 1 large scallion (green onion), cut into large pieces
  • Cooking oil (as needed for the pan)
  • Jangajji soy sauce glaze (generous amount, about 1 cup; adjust to taste)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp plum syrup (maesilcheong)
  • 1 Tbsp ginger syrup (or a pinch of ginger powder)
  • A small amount of broccoli (optional, for color and nutrition)
  • Plenty of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the 2 packs of chicken breast. Lightly rinse the chicken breast under running water, then cut it into pieces slightly larger than bite-sized. Cutting them too small can cause moisture loss, resulting in a dry texture.

Step 1

Step 2

Place the generously cut scallions over the prepared chicken breast. The sweetness and aroma of the scallions will meld beautifully with the chicken, enhancing its overall flavor.

Step 2

Step 3

Heat a pan over medium heat, add a little cooking oil, and then add the chicken breast and scallions. Begin to stir-fry. Cook until the chicken breast is partially cooked and the exterior turns white.

Step 3

Step 4

Once the chicken is lightly cooked, pour in a generous amount of the prepared jangajji soy sauce glaze. Mix well to ensure the sauce coats the chicken and scallions evenly.

Step 4

Step 5

Add 1/2 Tbsp of minced garlic to enhance the umami flavor.

Step 5

Step 6

Stir in 1 Tbsp of plum syrup to add sweetness and a glossy finish.

Step 6

Step 7

Finally, add 1 Tbsp of ginger syrup to eliminate any raw smell and deepen the flavor (if ginger syrup is unavailable, a tiny pinch of ginger powder can be used). Mix all ingredients well.

Step 7

Step 8

Now, reduce the heat to medium-low and continue to stir-fry until the soy sauce glaze has thickened and coats the chicken and scallions beautifully. Stir occasionally to prevent burning. If using broccoli, add it at this stage and cook briefly.

Step 8

Step 9

If you have complementary dishes like onion bread or sautéed mushrooms, toast them until golden and crisp, and arrange them nicely on the plate. If not serving with bread, this dish is also excellent with plain rice.

Step 9

Step 10

Finally, generously sprinkle toasted sesame seeds over the finished chicken breast and scallion stir-fry for a delightful visual appeal and nutty flavor. Your delicious dish is ready!

Step 10

Step 11

Savor the fantastic combination of chewy chicken breast, sweet scallions, and the rich soy sauce glaze. This dish is incredibly addictive and will have you reaching for another spoonful! Enjoy your delicious meal!
