Tteokbokki, a timeless favorite in Korean street food, gets a delightful makeover into a mild, soy-sauce-based version that the whole family can enjoy. Tteokbokki Ingredients- 10 Tteokbokki rice cakes (approx. 100g)
- 2 Garae-tteok sticks (approx. 100g)
- 1 bunch Green onions (white parts mainly)
- 1/2 Onion
- 3 Shiitake mushrooms
- 1.5 Tbsp minced garlic
Soy Sauce Seasoning Ingredients- 4 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp honey or corn syrup
- 1 pinch salt
- 1.5 Tbsp sesame oil
- 1 pinch black pepper
- 4 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp honey or corn syrup

Cooking Instructions
Step 1
First, rinse the tteokbokki rice cakes and garae-tteok in cold water to prevent them from sticking together. Cut the garae-tteok into bite-sized pieces. Chop the green onions into large pieces, focusing on the white parts, and slice the onion thinly. Trim the stems from the shiitake mushrooms and slice them thinly. Heat a generous amount of cooking oil in a wide pan or wok over medium heat. Add the chopped green onions and sliced onion, and sauté until fragrant, allowing the natural sweetness of the vegetables to release.
Step 2
Once the vegetables are softened and lightly sautéed, add the tteokbokki rice cakes and garae-tteok to the pan. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pan as they cook.
Step 3
As the rice cakes begin to soften slightly, create space in the pan or pour into the gaps: add 4 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp honey (or corn syrup), the sliced shiitake mushrooms, and 1.5 Tbsp minced garlic. Let this simmer over medium-low heat for about 5 minutes, allowing the flavors to meld and the rice cakes to absorb the sauce. The mushrooms will soak up the sauce, enhancing the overall flavor.
Step 4
After 5 minutes, when the rice cakes and sauce are well combined, turn off the heat temporarily. Drizzle in 1.5 Tbsp of sesame oil and mix well. Adding sesame oil after turning off the heat preserves its fragrant aroma, as prolonged cooking can diminish its scent.
Step 5
Turn the heat back on to low. Gently stir the ingredients with a spatula to prevent them from burning. Continue to cook for another 1-2 minutes until the rice cakes are tender and the sauce has thickened, coating the rice cakes with a glossy sheen. Be careful not to overcook, as this can make the rice cakes tough.
Step 6
Taste the tteokbokki and adjust the seasoning with a pinch of salt if needed. Since soy sauce is already salty, use only a small amount of salt. You can add a little sugar if you prefer it sweeter.
Step 7
Finally, sprinkle in a pinch of black pepper to remove any unwanted odors and garnish with toasted sesame seeds. Gently mix everything together for a perfectly done soy sauce tteokbokki! Enjoy it hot for the best taste.
