  • 1/3 Onion, thinly julienned
  • Salt to taste (for stir-frying vegetables)
  • Pepper to taste (for stir-frying vegetables)
  • 2 servings Somyeon (thin wheat noodles)
  • 1 tsp Sesame oil
  • 1 tsp Toasted sesame seeds
  • Edible flowers for garnish (optional)

Soy Sauce Bibim Guksu Dressing Ingredients
  • 1 Tbsp Soy sauce
  • 1 Tbsp Soup soy sauce (or regular soy sauce if unavailable)
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (rice wine)
  • 1 tsp Gochugaru (Korean chili flakes, adjust to spice preference)
  • 1 Tbsp Finely chopped green onions (scallions) (or white part of leeks)

Cooking Instructions

Step 1

First, heat a pan over medium heat and add about 1 tablespoon of cooking oil. Add the julienned zucchini, carrots, and onion. Stir-fry until the vegetables soften slightly, then season lightly with salt and pepper. Using a cast-iron pan helps to evaporate excess moisture.

Step 2

Once the vegetables are stir-fried, transfer them to a separate bowl to cool. This step prevents the dish from becoming watery and helps maintain the vegetables’ crisp texture.

Step 3

Boil a generous amount of water in a pot and cook the somyeon noodles according to package instructions. Once the noodles are cooked to your liking, rinse them thoroughly under cold running water, rubbing gently to remove excess starch. This ensures a chewy texture. Drain the noodles completely in a colander.

Step 4

While the noodles are draining, prepare the flavorful soy sauce dressing. In a bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of soup soy sauce, 1 tablespoon of sugar, 1 tablespoon of mirin, and 1 teaspoon of gochugaru. Mix well until all ingredients are fully incorporated.

Step 5

Finally, add the finely chopped green onions (about 1 tablespoon) to the prepared soy sauce dressing and mix gently for a fresh, aromatic flavor. (If green onions are unavailable, the white parts of leeks, finely chopped, can be used as a substitute.)

Step 6

Place the completely drained somyeon noodles into a mixing bowl. Gently loosen the noodles so they don’t clump together.

Step 7

Drizzle 1 teaspoon of sesame oil and sprinkle 1 teaspoon of toasted sesame seeds over the noodles to add a nutty aroma.

Step 8

Now, pour the prepared soy sauce dressing over the noodles. Gently mix the noodles with your hands, ensuring the dressing coats every strand evenly. This thorough mixing is key to achieving the best flavor.

Step 9

Transfer the dressed bibim guksu to a serving plate, arranging it attractively in the center. This presentation makes it easy to artfully arrange the stir-fried vegetable toppings around the noodles.

Step 10

For a more generous portion, you can also serve some of the soy sauce mixed noodles in a large bowl.

Step 11

Around the noodles on the serving plate, carefully arrange the stir-fried zucchini, carrots, and onions along the edge of the plate.

Step 12

Finally, garnish the stir-fried vegetable topping with a few edible flowers for a beautiful touch (optional). For the noodles served in the large bowl, place a mound of the stir-fried vegetables in the center and finish with edible flowers. This savory and slightly sweet Soy Sauce Bibim Guksu is a complete and satisfying meal. Mix the toppings and noodles well and enjoy your delicious homemade dish!
