With the kids on break, I find myself making more side dishes to stock up! Instead of always making quail eggs, I decided to make simple soy-marinated eggs with a carton of eggs I bought. Perfectly soft-boiled eggs soaked in a savory soy sauce mixture are a delicious and satisfying side dish that’s great for mixing with rice. Let’s start making these quick and easy soy-marinated eggs!

Ingredients
  • 8-9 Eggs
  • 1/2 Onion
  • 1/3 Carrot
  • 1 Tbsp Vinegar
  • 1 Tbsp Salt
  • 1 cup Soy Sauce (200ml)
  • 5 Tbsp Sugar
  • 1 cup Water (200ml)

Cooking Instructions

Step 1

First, let’s learn how to perfectly soft-boil eggs. Fill a pot generously with water and add 1 tablespoon of vinegar and 1 tablespoon of salt. Once the water is boiling rapidly, carefully add the eggs. Tip: Cold eggs straight from the refrigerator can crack when placed in boiling water. To prevent this, let them sit at room temperature for at least 30 minutes beforehand, or place the eggs in the water from the start as it heats up. For a perfect soft-boiled egg, cook for about 8-9 minutes after the water starts boiling.

Step 2

While the eggs are boiling, let’s make the delicious marinade! The golden ratio is Soy Sauce:Water:Sugar = 1:1:0.5. Measure 1 cup (200ml) of soy sauce and 1 cup (200ml) of water. Add 5 heaping tablespoons of sugar. Stir slowly with a spoon until the sugar is completely dissolved and the marinade is well combined.

Step 3

Now it’s time to add the secret ingredient for extra flavor. Add 1 tablespoon of minced garlic to the marinade and mix well. This simple step completes the basic marinade. It’s truly easy!

Step 4

Once the eggs are cooked, briefly immerse them in cold water just until they are cool enough to handle. Soaking them for too long can make them watery. Gently peel the shells off once they’ve cooled slightly. If the shells are difficult to remove, try making a small crack in the shell before peeling.

Step 5

Now, let’s prepare some vegetables to add fresh flavor and texture to the marinade. Finely chop 1/2 onion and thinly slice or finely chop 1/3 carrot, then add them to the marinade. The vegetables will add a pleasant crunch and sweetness, making the dish even more delicious.

Now, add the perfectly soft-boiled eggs to the marinade and vegetables. Gently stir with a spoon to combine all the ingredients, being careful not to break the eggs.
