  • 1/4 onion
  • 1 red chili pepper (for garnish)

Seasoning Ingredients

  • 1 Tbsp doenjang (Korean soybean paste)
  • 1 Tbsp gochujang (Korean chili paste)
  • 2/3 Tbsp minced garlic
  • 1 Tbsp pureed onion
  • 2/3 Tbsp ground sesame seeds
  • 1/2 Tbsp sesame oil

Cooking Instructions

First, cut the blanched sweet potato stems into bite-sized pieces, about 3-4 cm long. Cutting them too long can make them difficult to eat.

Peel and thinly slice the onion. Remove the seeds from the red chili pepper and slice it diagonally to create an appealing garnish. Prepping your ingredients like this makes the cooking process much smoother.

Now, let’s make the delicious seasoning. In a bowl, combine 1 Tbsp doenjang, 1 Tbsp gochujang, 2/3 Tbsp minced garlic, and 1 Tbsp pureed onion. Mix them well. (We’ll add the sesame seeds and sesame oil at the end.)

Add the cut sweet potato stems to the prepared seasoning. Gently mix them with your hands, massaging them lightly to ensure the seasoning coats every part of the stems. It’s important to mix gently so as not to mash the stems.

Finally, add the sliced onion and diagonally sliced red chili pepper. Then, add 1/2 Tbsp sesame oil and 2/3 Tbsp ground sesame seeds, and mix gently one last time. Your sweet potato stem dish is complete! It’s delicious right away, but for an even deeper flavor, refrigerate it for a few hours or overnight; the seasoning will penetrate further, making it even tastier.
