  • 1 Zucchini (palm-sized)
  • 1 Tbsp minced garlic
  • 1/2 Onion
  • 1 Tbsp sesame oil
  • 1/2 Tbsp salted shrimp (saeujeot)
  • 1 Tbsp crushed sesame seeds
  • 1/2 cup kelp and anchovy broth

The zucchini for this recipe is a fresh one from our garden, about the size of an adult’s palm, which is a bit thicker than those typically found in supermarkets.

First, trim off the ends of the zucchini. Then, cut it into four wedges lengthwise, shaping it like a fan. After that, slice it into approximately 1 cm thick pieces. Cutting them a bit thicker prevents them from becoming mushy during stir-frying.

Place all the sliced zucchini into a pot or a deep pan. Add 1 tablespoon of minced garlic, the half onion thinly sliced, and 1 tablespoon of sesame oil for added richness.

Pour in 1/2 cup of kelp and anchovy broth to enhance the umami flavor. Give everything a gentle stir to ensure the ingredients are evenly coated. It’s important to distribute the broth well among the ingredients.

Now, add the key ingredient for this dish: 1/2 tablespoon of salted shrimp (saeujeot). Cook over medium-low heat, stirring occasionally to prevent burning.
