Main Ingredients- Frozen Tteokgalbi 260g
- Onion 1/2 medium
- Chives 30g
- Prepared Sauce 3 Tbsp
- Cooking Oil 1 Tbsp
Tteokgalbi Sauce Ingredients (Prepare Separately)- Gochugaru (Korean chili powder) 5 Tbsp
- Minced Garlic 1 Tbsp
- Cheongyang Gochugaru (spicy chili powder) 1 tsp (adjust to taste)
- Soy Sauce or Tamari 4 Tbsp
- Plum Extract 1 Tbsp
- Ginger Juice or Powder 1 tsp
- Seasoned Soy Sauce (Mat-ganjang) 2 Tbsp
- Toasted Sesame Seeds 1 tsp
- Sesame Oil 1 tsp
- Gochugaru (Korean chili powder) 5 Tbsp
- Minced Garlic 1 Tbsp
- Cheongyang Gochugaru (spicy chili powder) 1 tsp (adjust to taste)
- Soy Sauce or Tamari 4 Tbsp
- Plum Extract 1 Tbsp
- Ginger Juice or Powder 1 tsp
- Seasoned Soy Sauce (Mat-ganjang) 2 Tbsp

Cooking Instructions
Step 1
Heat a frying pan over medium heat without oil. Place the frozen tteokgalbi in the pan and cook until golden brown on both sides. It’s best to cook it slowly over medium-low heat to prevent burning.
Step 2
While the tteokgalbi is cooking, prepare the vegetables. Thinly slice the onion. Wash the chives and cut them into roughly 1.5-inch (3-4 cm) lengths. Cutting the chives to a manageable size will make stir-frying easier.
Step 3
Once the tteokgalbi is almost cooked, push it to one side of the pan or temporarily remove it. Cut it into bite-sized pieces. Avoid cutting them too small, as they might break apart during stir-frying.
Step 4
Add 1 Tbsp of cooking oil to the pan with the tteokgalbi. Add the sliced onions and stir-fry over medium heat until they become translucent. Caramelizing the onions slightly will enhance their sweetness.
Step 5
Prepare the tteokgalbi sauce you made previously. This sauce is versatile and can be used for other dishes like seasoned chives or grilled fish. (Refer to a separate recipe for sauce preparation details.)
Step 6
Pour the prepared sauce (3 Tbsp) over the onions and tteokgalbi in the pan. Stir well to ensure the sauce coats all ingredients evenly as you continue to stir-fry.
Step 7
Once the sauce is well combined with the ingredients, add the chopped chives. Stir-fry over high heat for a very short time, just until the chives wilt slightly from the residual heat. Be careful not to overcook the chives. Stir everything together and turn off the heat immediately. The residual heat will finish cooking the chives perfectly.
Step 8
The stir-fry is now complete! The savory and slightly spicy sauce balances the sweetness of the tteokgalbi, while the fresh onions and chives add a wonderful texture and flavor. This makes an excellent side dish that pairs perfectly with rice.
