Main Ingredients
- Boiled dried sweet potato stems, prepared 500g
Seasoning
- Perilla seed powder 3 Tbsp
- Salt 1 tsp
- Minced garlic 1 Tbsp
- Perilla oil 2 Tbsp
- Water (using a paper cup) 1/2 cup
- Perilla seed powder 3 Tbsp
- Salt 1 tsp
- Minced garlic 1 Tbsp
- Perilla oil 2 Tbsp
- Water (using a paper cup) 1/2 cup
Cooking Instructions
Step 1
First, rehydrate the dried sweet potato stems until softened, then boil them until tender. Once boiled, cut the sweet potato stems into bite-sized pieces, about 2-3 segments each. (Tip: For a cleaner taste, you can peel off the rough outer skin before boiling.)
Step 2
Place the prepared sweet potato stems in a bowl. Add minced garlic, perilla oil, and salt. Gently mix and massage the ingredients with your hands to ensure the seasoning is evenly distributed. (Tip: Marinating the stems beforehand allows the flavors to penetrate better, making them more delicious.)
Step 3
Heat a pan over medium heat. Add all the seasoned sweet potato stems and stir-fry. Pour in about 1/2 cup of water (measured with a paper cup) and continue to stir-fry for another 2 minutes. Try to leave a small empty space in the center of the pan, which will be helpful for toasting the perilla powder in the next step.
Step 4
Add the perilla seed powder to the empty space you created in the center of the pan. Let it toast slightly until fragrant, releasing its nutty aroma. Then, mix it well with the sweet potato stems and continue to stir-fry everything together.
Step 5
As you stir-fry, the perilla seed powder will absorb the remaining moisture, creating a wonderfully seasoned texture that is moist but not watery.
Step 6
Your delicious stir-fried sweet potato stems, featuring the rich nutty flavor of perilla and a satisfyingly tender texture, are now ready! Enjoy this wonderful side dish with a bowl of hot rice.
