Ingredients

  • 300g well-fermented Altarikimchi, chopped
  • A handful of green onion (white part), finely chopped
  • 150g canned tuna, drained
  • 600g cooked rice (about 2-3 servings)
  • 3 Tbsp perilla oil
  • 1.5 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp sugar
  • 1 Tbsp red pepper paste (gochujang)
  • 3 Tbsp kimchi juice (from Altarikimchi)
  • 1 Tbsp oyster sauce
  • A pinch of black pepper

Cooking Instructions

Step 1

Heat a large frying pan or wok over medium heat. Add 3 tablespoons of perilla oil and sauté the chopped green onions until fragrant and slightly softened, about 1-2 minutes. Be careful not to burn them, as this creates a wonderful aromatic base.

Add the chopped Altarikimchi to the pan. Stir in 1.5 tablespoons of red pepper flakes, 1 tablespoon of sugar, 1 tablespoon of red pepper paste, and 3 tablespoons of kimchi juice. Sauté everything together for about 3-4 minutes until the kimchi softens and the flavors meld. Adjust heat as needed to prevent sticking.

Add the drained canned tuna and 600g of cooked rice to the pan. Gently break apart any clumps of rice with your spatula and stir-fry until everything is well combined and the rice is heated through, approximately 3-4 minutes. Ensure the rice grains are separated.

Finally, stir in 1 tablespoon of oyster sauce for an extra umami boost. Season with a pinch of black pepper to your liking. Stir everything together thoroughly one last time to ensure all ingredients are evenly distributed. Your delicious Altarikimchi fried rice is ready to be served hot!
