Essential Ingredients

  • 200g Pork (shoulder or leg cut, suitable for stir-frying)
  • 1/3 Onion
  • 1/3 Carrot
  • 2 Korean Red Chili Peppers (adjust to your spice preference)
  • 1/2 Green Onion
  • 1/6 Cabbage
  • 1 serving Udon Noodles (fresh or frozen)
  • A pinch of Sesame Seeds (for garnish)

Seasoning Ingredients

  • A pinch of Black Pepper (for marinating)
  • A pinch of Salt (for marinating)
  • 3 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Sugar (adjust to taste)
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Minced Garlic

Cooking Instructions

First, prepare 200g of pork. It’s convenient to use pre-sliced pork meant for stir-frying. Season the pork with a pinch of salt and black pepper, then gently mix to marinate. This step helps to reduce any gamey odors and allows the flavors to penetrate the meat.

In a bowl, combine all the seasoning ingredients for the stir-fried pork. Add 3 Tbsp Gochujang, 3 Tbsp Gochugaru, 3 Tbsp Sugar, 3 Tbsp Soy Sauce, 2 Tbsp Mirin, and 1 Tbsp Minced Garlic. Mix well to create a delicious sauce.

Pour the prepared sauce over the marinated pork. Use your hands to thoroughly coat the pork with the sauce, ensuring every piece is covered. Let it marinate for about 15 minutes in the refrigerator. This resting period will make the pork more tender and infuse it with deep flavor.

While the pork is marinating, prepare the vegetables. Thinly slice the onion and carrot. Cut the cabbage into bite-sized chunks. Finely mince the Korean red chili peppers for added heat, and slice the green onion diagonally. (Tip: Dicing the onion instead of slicing it can give a better texture.)

Boil water in a pot. Add the udon noodles and stir gently to separate them. Cook for just 1-2 minutes until the noodles are loosened; avoid overcooking, as this can make them mushy. Drain the noodles and rinse them under cold water to stop the cooking process and remove excess starch. Set aside.

Heat a pan over medium-high heat. Add the marinated pork and break it apart with a spatula to prevent it from clumping. Stir-fry until the pork is fully cooked and no longer pink.

When the vegetables begin to soften slightly, add the diagonally sliced green onion. To prevent the sauce from burning and to help it distribute evenly, add about 50ml of water. Stir everything together well to combine and continue cooking.

Once the vegetables are tender, add the pre-cooked udon noodles and any remaining sauce (if any) to the pan. Stir-fry everything together for another 1-2 minutes, ensuring the noodles are well coated with the sauce and mixed with the pork and vegetables.
