- 100g pork, thinly sliced (loin or tenderloin recommended)

Step 1
Wash the chives thoroughly and separate the white stems from the green leaves. In Chinese cuisine, the white stems are often used to maintain a crisp texture. If the white stems are sparse on your chives, try to utilize them as much as possible. Cut the chives into 2-3 cm lengths.

Thaw the pork tenderloin from the freezer and slice it thinly into strips, similar to those used for Japchae. If using fresh pork, tenderloin or loin cuts with less fat are recommended.

1. Heat 30g of cooking oil in a pan over low heat. Add the finely chopped white part of the green onion and stir-fry until fragrant to create ‘scallion oil.’ This will infuse the oil with the sweet aroma of the scallions, enhancing the dish’s flavor. 2. Once the scallion oil is fragrant, add the thinly sliced pork and stir-fry over medium heat until the surface is cooked. 3. When the pork is partially cooked, add 1/2 Tbsp brown sugar, 1 Tbsp soy sauce, 1/2 Tbsp soup soy sauce, and 1/2 Tbsp oyster sauce. Stir-fry everything together. These seasonings help create a smoky flavor and add umami to the dish.

4. At this point, add 1 Tbsp of dark soy sauce, which is a Chinese soy sauce, to enhance the color. Dark soy sauce is primarily for color rather than saltiness, so you can omit it if unavailable. 5. Add 1 Tbsp of minced garlic and stir-fry with the pork to infuse it with garlic aroma. 6. Now, add the prepared chives and stir-fry quickly over high heat. It’s crucial to cook them for about 1 minute, just until they wilt slightly, preserving their crispness and fresh aroma. 7. Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and give it a light toss to finish.

The key to this dish is to maintain the fresh texture and aroma of the chives. The oyster sauce and soy sauce-based seasoning blend well with the pork to create a deep flavor, but be careful not to overcook the chives until they become mushy. While following the exact measurements from the broadcast recipe is good, this combination of seasonings will yield a delicious flavor even in a home kitchen.
