We’ve stir-fried fresh Petasites with gochugaru (Korean chili powder) for a wonderfully spicy and flavorful dish. This side dish brings out the natural taste of the vegetables with a pleasant kick.

Main Ingredients

  • 600g prepared Petasites (Meowidae)
  • 1 stalk green onion

Seasoning Ingredients

  • 2 Tbsp perilla oil (deulgireum)
  • 2 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp sugar
  • 1 Tbsp soup soy sauce (guk-ganjang)
  • 2 Tbsp regular soy sauce (jin-ganjang)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame oil
  • 1/2 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Start with your prepared Petasites. To remove its slightly bitter taste, blanch the Petasites in boiling salted water for about 5 minutes. Afterwards, soak them in fresh water for several hours to let the bitterness fully leach out. This step is crucial for a pleasant flavor.

Once the bitterness is removed, cut the Petasites into bite-sized pieces, approximately 5-7 cm long. Make sure to drain them thoroughly; excess water can make the stir-fry soggy and prevent the seasoning from adhering well.

Finely chop one stalk of green onion. The mild pungent flavor and aroma of the green onion will add another layer of complexity to the dish.

Heat a pan over medium-low heat. Add 2 tablespoons of flavorful perilla oil and 2 tablespoons of minced garlic. Sauté until the garlic is fragrant but not browned. This step infuses the oil with a delicious aroma, setting the stage for the stir-fry.

Once the garlic is fragrant, add the prepared Petasites to the pan. Now, add the seasonings: 2 tablespoons of gochugaru for spiciness, 1 tablespoon of sugar for a touch of sweetness, 1 tablespoon of soup soy sauce and 2 tablespoons of regular soy sauce for umami, and 1 tablespoon of plum extract for a fruity note.

Toss everything together gently with a spatula, ensuring the seasoning coats the Petasites evenly. I initially added 1 tablespoon of sugar, but after tasting, I felt it needed a bit more sweetness, so I added another half tablespoon. Feel free to adjust the sugar or soy sauce to your personal preference. Petasites can release a lot of moisture, so continue to stir-fry over medium heat until most of the liquid has evaporated and the vegetables are tender.

As you continue to stir-fry, you’ll notice the gochugaru beautifully coloring the Petasites and the liquid reducing, resulting in a glossy finish.

Finally, add the chopped green onions. Drizzle in 1 tablespoon of sesame oil for its nutty aroma and sprinkle with 1/2 tablespoon of toasted sesame seeds. Stir-fry just until the green onions are slightly wilted.
