  • Oyster mushrooms 147g (trimmed and separated into bite-sized pieces)
  • Carrot 52g
  • Onion 40g

First, trim the tough bottom ends of the fresh oyster mushrooms. Gently pull them apart by hand into bite-sized pieces. This ensures the seasoning coats them evenly for maximum flavor.

Next, julienne the carrot (for color) and the onion (for sweetness) into thin strips about 3mm thick. Cutting them to a uniform thickness ensures they cook at the same rate, resulting in a pleasant texture.

Prepare 0.6 Tbsp of minced garlic for aromatic depth. Cut the green onions into approximately 3cm lengths. Set aside a small portion to be finely chopped for garnish later; this adds a nice visual touch.

Now, let’s start stir-frying! In a wide pan, add all the prepared oyster mushrooms, julienned onion, and carrot. Drizzle generously with 3 Tbsp of olive oil.

Stir-fry for about 30 seconds until the ingredients are lightly coated with olive oil. Then, add 2 pinches of salt. Adding a little salt at this stage helps the mushrooms and vegetables release their moisture, preventing them from sticking and allowing them to cook down more easily, resulting in a tender texture.

Reduce the heat to medium. Continue to stir-fry, gently tossing the ingredients, until the mushrooms have softened and wilted. You’ll notice their volume decrease as they cook.

Once the mushrooms are cooked, add 0.5 Tbsp of oyster sauce for a savory depth and 0.25 to 0.3 tsp of salt for the final seasoning. Stir well to combine and continue stir-frying. Oyster sauce and mushrooms are a fantastic pairing!

Taste the stir-fry and, if needed, add more salt to adjust the seasoning to your preference. Remember that oyster sauce already contains salt, so it’s best to taste before adding more. This simple seasoning of oyster sauce and salt creates a clean and rich mushroom side dish.

Finally, add the 3cm cut green onions and minced garlic to the pan. Stir-fry for about 1 minute more, just until the garlic becomes fragrant. Be careful not to overcook, as this can diminish the garlic’s aroma.
