My mother sent me some young radish that had become overripe. I decided to make a ‘Doenjang Jijimi’ (fermented soybean paste stir-fry), a dish my mother used to make for me when I was young, which is guaranteed to have you reaching for more rice!   • 400g overripe young radish (Yeolmu)
  • 5 dried anchovies for broth

Seasoning Ingredients

  • 5 Tbsp perilla oil
  • 1 Tbsp gochugaru (Korean chili flakes, fine)
  • 1 Tbsp doenjang (fermented soybean paste)
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds

Cooking Instructions

First, prepare the ingredients. Rinse the 400g of overripe young radish under running water 2-3 times until clean. Squeeze out as much water as possible with your hands. This step ensures the seasoning adheres well and prevents the radish from becoming too mushy.

In a pot or deep pan, heat 5 tablespoons of perilla oil over medium-low heat. Add 1 tablespoon of minced garlic, 1 tablespoon of gochugaru, and 1 tablespoon of doenjang. Stir-fry for 1-2 minutes, stirring constantly to combine the seasonings evenly without burning. Stir-frying the paste beforehand enhances its savory aroma.

Add the prepared 400g of overripe young radish to the pot.

Also add 5 dried anchovies for broth. These anchovies are the secret ingredient that elevates the umami flavor of the doenjang jijimi, making it even more delicious! Stir-fry the radish and anchovies together for about 1-2 minutes. The anchovies will lightly coat in the oil, adding more depth of flavor.

Now, pour in 250ml of water. The anchovies will release their flavor, creating a delicious broth.

Cover the pot with a lid and simmer over medium-low heat for about 10 minutes, allowing it to cook gently. Once the young radish is tender and the liquid has reduced slightly, turn off the heat. Finally, sprinkle with sesame seeds for garnish. Your savory Doenjang Jijimi is now ready!
