Savory Stir-fried King Oyster Mushrooms
[Super Easy Mushroom Side Dish] How to Make Delicious, Savory Stir-fried King Oyster Mushrooms Using Leftover Mushrooms
Do you always have leftover mushrooms? I’ve transformed some leftover king oyster mushrooms from our last barbecue into a delicious, savory side dish that the whole family will love! It’s a perfect rice accompaniment.
Main Ingredients- 3 King Oyster Mushrooms
- A small piece of Carrot (approx. 30g)
- 1/2 Onion (approx. 80g)
- A little Green Onion (approx. 20g)
Seasoning- 1 Tbsp Soy Sauce
- 0.5 Tbsp Fish Sauce
- 0.5 Tbsp Sugar
- Cornstarch Slurry (2-3 Tbsp water + 1 Tbsp cornstarch)
- 1 Tbsp Sesame Oil
- A pinch of Sesame Seeds
- 1 Tbsp Soy Sauce
- 0.5 Tbsp Fish Sauce
- 0.5 Tbsp Sugar
- Cornstarch Slurry (2-3 Tbsp water + 1 Tbsp cornstarch)
- 1 Tbsp Sesame Oil
- A pinch of Sesame Seeds
Cooking Instructions
Step 1
First, wash and prepare all the vegetables. Trim the base of the king oyster mushrooms and slice them into bite-sized pieces. If serving to children, it’s a good idea to cut them smaller for easier eating. Thinly slice the carrot and onion into strips, and finely chop the green onion.
Step 2
Prepare the cornstarch slurry which will add gloss and a chewy texture to the stir-fry. In a small bowl, mix 2-3 tablespoons of water with 1 tablespoon of cornstarch until smooth.
Step 3
Heat 1-2 tablespoons of cooking oil in a frying pan over medium-high heat. Add the sliced onions and carrots and stir-fry until the onions become slightly translucent. Then, add the king oyster mushrooms and continue to stir-fry until the mushrooms soften and turn lightly golden.
Step 4
Now it’s time to add the seasonings. Create a small space in the pan and add 1 tablespoon of soy sauce, 0.5 tablespoon of fish sauce, and 0.5 tablespoon of sugar. Once the seasonings begin to bubble slightly, mix them well with the vegetables and stir-fry until glossy.
Step 5
Add the chopped green onions and stir-fry for about 1 minute until they wilt slightly and release their aroma. Adding the green onions towards the end enhances their fragrant flavor.
Step 6
Finally, evenly pour in the prepared cornstarch slurry. Stir quickly as the slurry boils and thickens, coating all the ingredients. It’s important to stir-fry until the sauce clings to the ingredients.
Step 7
Turn off the heat and finish by drizzling in 1 tablespoon of sesame oil for added fragrance. Sprinkle with a pinch of sesame seeds for a nutty finish. Your delicious savory stir-fried king oyster mushrooms are ready! Serve them over warm rice for a simple rice bowl, or as a side dish for your meal.
