- 1 Tbsp Toasted Sesame Seeds

First, prepare the ferns. If you’re using pre-washed and blanched fiddleheads from the market, simply rinse them thoroughly under cold running water. If you’re starting with fresh fiddleheads, you’ll need to boil them until tender (you can soak them in rice water first to help remove bitterness) and then rinse them in cold water. Once cleaned and blanched, gently squeeze out excess water. Then, cut the ferns into bite-sized pieces, about 5-7 cm (2-3 inches) long. Cutting them to a manageable size will make stir-frying and eating much easier.

Now, let’s start stir-frying. Lightly oil a pan over medium-low heat. Add the prepared ferns to the pan. Pour in about 1/3 cup (approx. 60ml) of water. Add the minced garlic (1 Tbsp), soy sauce (2 Tbsp), and a pinch of black pepper. We’ll add the sesame seeds later. Stir gently to combine everything. Stir-fry for about 1 more minute. You want the vegetables to be tender-crisp, retaining their fresh flavor and color. Avoid overcooking at this stage.
