Hello everyone! Today, we’re going to make a truly delicious ‘Stir-Fried Eggplant’ using fresh, seasonal eggplants. We’ll enhance the savory flavor with oyster sauce, and this recipe is so simple that anyone can follow it with just a few basic seasonings. It’s perfect as a side dish or for your lunchbox!
Step 2
First, wash the eggplant thoroughly and remove the stem. Cut it into pieces about 5cm long. Slicing them to about 0.7cm thickness will give a better texture; avoid making them too thin. Thinly slice the 1/4 onion into similar lengths and thickness. Finely chop a handful of green onions to prepare. Using mainly the white parts of the green onion will add more flavor.
Step 3
Heat 1-2 tablespoons of cooking oil in a frying pan. Add the chopped green onions and cook over low heat until fragrant, creating a scallion oil. Once the scallion aroma is released, add the sliced onions and increase the heat to medium. Stir-fry for about 1-2 minutes until the onions become translucent. Next, add the cut eggplant and stir-fry for about 2-3 minutes until the eggplant softens slightly. It’s important not to overcook the eggplant, as it can become mushy.

Once the eggplant and onions are sufficiently cooked, add all the seasoning ingredients (1 Tbsp oyster sauce, 1 tsp red pepper flakes, 1 tsp sugar, 1 tsp minced garlic) to the pan. Quickly stir-fry to ensure the ingredients and seasonings are evenly combined. Be mindful of the heat to prevent the seasonings from burning. Continue to stir-fry for about 1 more minute, allowing the delicious seasoning to fully infuse into the eggplant. Finally, sprinkle with sesame seeds to finish.
