Making a Delicious Side Dish with Ingredients from Your Fridge: Stir-Fried Dried Shrimp and Anchovies
Today, I made a delicious side dish using the small amounts of dried shrimp and anchovies left in my fridge. Adding leftover roasted peanuts made this ‘Stir-Fried Dried Shrimp and Anchovies’ wonderfully savory and sweet-salty! It’s a perfect match for rice.
Main Ingredients
- Dried anchovies (Jann-myeolchi) 1 paper cup
- Dried shrimp 1 cup
- Whole garlic cloves 4
- Roasted peanuts 1/2 cup (measured with a paper cup)
Sweet and Salty Sauce
- Soy sauce 2 Tbsp
- Corn syrup 2 Tbsp
- Cooking wine (Mirin, etc.) 1 Tbsp
- Brown sugar 1/2 Tbsp
- Sesame oil, a little
- Toasted sesame seeds, a little

Cooking Instructions
Step 1
First, prepare the stars of our stir-fry: 1 cup of dried anchovies, 1 cup of dried shrimp, and half a cup (measured with a paper cup) of roasted peanuts for a delightful crunch. Wash the 4 whole garlic cloves and thinly slice them.

To remove any impurities and excess saltiness from the anchovies and dried shrimp, place them in a colander and rinse them lightly under cold running water. Think of it as a quick shower; it’s important not to wash them for too long.

Now, let’s start stir-frying. Heat a dry pan and add the anchovies and dried shrimp. Stir-fry them until they become slightly golden brown and any fishy smell dissipates, being careful not to burn them.

Tilt the pan to gather the fried anchovies and shrimp to one side. Add a little oil to the empty space in the pan and sauté the thinly sliced garlic until fragrant. You’ll know it’s ready when you can smell the garlic aroma.

Once the garlic is lightly cooked, add the prepared roasted peanuts. Stir-fry everything together gently so that all the ingredients are well combined.

Now, let’s make the delicious sweet and salty sauce. Add 2 Tbsp soy sauce, 2 Tbsp corn syrup, 1/2 Tbsp brown sugar, and 1 Tbsp cooking wine to the pan. Stir-fry over high heat for just a short moment until the sauce coats all the ingredients. Be careful not to let the sauce reduce too much; stir for about a minute and then turn off the heat immediately.
