This is a delicious side dish made with nutritious dried shrimp and savory pumpkin seeds. The sweet and savory glaze adheres perfectly to the shrimp, making it an irresistible rice accompaniment! It’s a practical side dish that keeps well in the refrigerator. Let’s make this simple stir-fried dried shrimp right away.
Main Ingredients- 3 handfuls of dried shrimp (approx. 150g)
- 2 Tbsp pumpkin seeds
Cooking Instructions
Step 1
First, prepare 3 handfuls (about 150g) of dried shrimp. You can use small dried shrimp or tiny shrimp (like cherry shrimp) according to your preference.
Step 2
Heat a dry pan over low heat. Add the dried shrimp and stir-fry for just 1-2 minutes. This helps to remove any fishy smell and enhance their nutty flavor. Be careful not to overcook, as they can burn or become too hard.
Step 3
To the same pan where you stir-fried the shrimp, add 2 tablespoons of pumpkin seeds. Stir-fry them together with the dried shrimp briefly. Roasting the pumpkin seeds along with the shrimp adds a double dose of nutty flavor and a more satisfying texture.
Step 4
Remove the stir-fried shrimp and pumpkin seeds from the pan and let them cool slightly. They don’t need to cool completely, just enough to be handleable.
Step 5
Now, let’s make the sauce. Return the pan to medium heat and add 1 tablespoon of sugar, 1 tablespoon of soy sauce, and 2 tablespoons of water. Stir well and bring to a boil. Once the sauce starts simmering, reduce the heat to medium-low.
Step 6
Add the slightly cooled dried shrimp and pumpkin seeds back into the simmering sauce. Stir-fry quickly for about 30 seconds to 1 minute, ensuring the glaze coats everything evenly. Toss them ‘swish-swish’ style to prevent burning and coat well, then immediately turn off the heat.
Step 7
With the heat turned off, add 1 tablespoon of toasted sesame seeds and mix them in using the residual heat. The nutty aroma of sesame seeds will further enhance the flavor.
Step 8
Finally, drizzle in 1 tablespoon of sesame oil for a glossy finish and added aroma. Your delicious stir-fried dried shrimp are ready! Isn’t that simple? They are fantastic served over warm rice. Enjoy Chef Durimun’s Stir-Fried Dried Shrimp! ^^
