Savory Stir-Fried Dried Aster Scaber (Cheonppul)
A Delicious Way to Cook Dried Vegetables: How to Make Stir-Fried Dried Aster Scaber
Today, I decided to cook with dried vegetables after a long time. I made a fragrant stir-fried dried aster scaber dish. Its unique aroma is truly delightful!
Ingredients- Dried Aster Scaber 50g
- Soy Sauce 5 Tbsp
- Minced Garlic 1 Tbsp
- Water 50ml
- Cooking Oil 2 Tbsp
- Sesame Oil 1 Tbsp
- Sesame Seeds 1 Tbsp
Cooking Instructions
Step 1
First, prepare the dried aster scaber. Soak the dried aster scaber in cold water and let it rehydrate for about a day. It needs to be soaked for at least 5 hours to become tender. I soaked mine for a bit longer for better texture.
Step 2
Once the dried aster scaber is well-soaked, rinse it thoroughly under running water 3 to 4 times to remove any dirt or debris. This step also helps to reduce any bitterness.
Step 3
In a large pot, add enough water to completely submerge the aster scaber. Add 0.5 Tbsp of salt and bring it to a boil over high heat.
Step 4
Once the water starts boiling, reduce the heat to medium and cook for about 20 minutes, covered. Boiling it like this will make the aster scaber tender and bring out its characteristic aroma.
Step 5
After boiling for 20 minutes, turn off the heat, keep the lid on, and let it steam for approximately 30 minutes. This steaming process will make the aster scaber even more moist and tender.
Step 6
Once the steaming is complete, drain the aster scaber and rinse it briefly under cold water to cool it down.
Step 7
Gently squeeze out about 50% of the water from the boiled aster scaber. Avoid squeezing too hard, as this can make it dry. Aim for a moist texture.
Step 8
In a bowl, add 5 Tbsp of soy sauce to the prepared aster scaber. Gently massage the scaber with your hands to ensure the soy sauce is evenly distributed and absorbed. Let it marinate for a bit.
Step 9
Add 1 Tbsp of minced garlic and 2 Tbsp of cooking oil to the marinated aster scaber. Now, turn the heat to high and stir-fry everything together.
Step 10
If the mixture seems too dry while stir-frying, add about 50ml of water to keep it moist and prevent burning. Continue to stir-fry for about 5 more minutes.
Step 11
Once everything is well-stir-fried, turn off the heat. Finally, add 1 Tbsp of sesame oil and 1 Tbsp of sesame seeds for extra flavor and aroma. Mix well to combine.
Step 12
Your delicious stir-fried dried aster scaber is now complete! It has a wonderfully savory flavor and a pleasant chewy texture. This makes a fantastic side dish that pairs perfectly with a bowl of warm rice.
