It’s a popular dish in Chinese cuisine, known as 韭菜炒鸡蛋 (Jiǔcài chǎo jīdàn). It’s incredibly simple yet packed with a subtle, savory flavor that makes it a must-try if you love chives and eggs! This recipe is for one serving. Please prepare 2 large eggs and about 10 stalks of fresh chives. Adjust the amount of chives according to your preference; too much might overpower the delicate egg flavor.

Wash the chives thoroughly and pat them completely dry. Trim off any tough ends, then cut the chives into approximately 2 cm (about 1 inch) lengths. Cutting them too finely can cause them to break apart during stir-frying.
