I used pre-peeled burdock strips from the supermarket and seasoned them with soy sauce and corn syrup. The satisfying texture of the burdock combined with the savory-sweet glaze makes it an excellent accompaniment to rice. If you love burdock, you should definitely give this a try! Ingredients

  • 400g peeled burdock root strips
  • 1 swirl of cooking oil (approx. 1-2 Tbsp)
  • 6 Tbsp soy sauce
  • 1.5 Tbsp corn syrup (or oligodangs)
  • Sesame seeds, for garnish
  • Water (for soaking burdock)

Cooking Instructions

Step 1

First, prepare 400g of peeled burdock root strips. To remove any astringency and slightly soften the burdock, soak them in cold water for about 10 to 15 minutes. This soaking process helps to make the burdock more tender.

Lightly drain the soaked burdock strips and add them to a preheated pan with a swirl of cooking oil. Stir-fry over high heat for about 2 minutes. This step helps to evaporate some of the burdock’s moisture, enhancing its crisp texture.

After 2 minutes, reduce the heat to medium. Now it’s time to add the key flavorings: 6 tablespoons of soy sauce, 1.5 tablespoons of corn syrup (or oligodangs), and a sprinkle of sesame seeds for nutty flavor and garnish. Continue to stir-fry, adjusting the heat as needed, until the burdock strips are glossy and well-coated with the glaze. Be careful not to burn them.
