  • 5 Tbsp perilla oil
  • 2 Tbsp sugar
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp kimchi juice
  • 200ml water

When chopping kimchi on a cutting board, using parchment paper makes cleanup incredibly easy! Often, the board gets stained red after cutting kimchi, requiring a lot of scrubbing. Place a sheet of parchment paper on your cutting board before you start chopping the kimchi. Once you’re done, simply fold up the parchment paper and discard it for a mess-free board and less washing up. This is a great tip, so give it a try!

Let’s prepare the seasonings for this simple stir-fried kimchi. Since aged kimchi can be quite sour, we’ll add 2 tablespoons of sugar to balance the acidity. For a vibrant color, add 2 tablespoons of gochugaru (Korean chili flakes). To enhance the savory flavor, include 2 tablespoons of kimchi juice. Finally, for that irresistible nutty aroma, generously add 5 tablespoons of perilla oil.

Put on some gloves and gently mix the kimchi with the prepared seasonings by hand. This ensures that the seasoning is evenly distributed throughout the kimchi, leading to a more flavorful dish.

Add 200ml of water to the seasoned kimchi. To prevent the kimchi from burning or becoming tough, start by stir-frying over medium heat for about 5 minutes. Once the sauce begins to reduce, lower the heat to low and continue to cook for another 5 minutes. Stir-fried kimchi tastes best when it’s slightly reduced and concentrated, so keep an eye on it and cook to your desired consistency. Starting on medium heat prevents burning and allows the flavors to meld properly as it reduces.
