This Spinach Miso Soup is packed with umami and is perfect for when you have a reduced appetite. Main Ingredients- 1/2 bunch fresh spinach
- 100g oyster mushrooms
- 1/4 medium onion
- A small bunch of scallions (green onions)
- 1 spicy green chili pepper (optional)
- 4 cups anchovy broth (approx. 800ml)
- 3 cups rice water (approx. 600ml)

Cooking Instructions
Step 1
Begin by thoroughly washing the fresh spinach under running water to remove any dirt. Trim off any tough root ends if necessary, and then cut the spinach into bite-sized pieces, about 3-4 cm long, making it easy to eat.

Prepare the oyster mushrooms by tearing off the tough, woody ends and then gently shredding them by hand. Thinly slice the onion. Finely chop the scallions. If you prefer a touch of heat, thinly slice the spicy green chili pepper.

Now, let’s build the flavorful broth. In a pot, combine 4 cups of anchovy broth and 3 cups of rice water. Add 4 tablespoons of miso paste and whisk it thoroughly with a whisk or spoon until it’s completely dissolved and smooth. Using rice water will make the soup creamier and enhance its savory depth. Once the miso is dissolved, add the sliced onion and bring it to a boil over high heat.
