Steam Spinach Without Water! Delicious Spinach Salad with Miso Paste
This is a wonderfully mild and savory spinach salad made with winter ‘seomcho’ spinach, enhanced with the delightful flavor of miso paste. We use a special technique to steam the spinach without any added water, preserving its nutrients and resulting in a delightful crunch. It’s a healthy and flavorful side dish that’s perfect with any meal!
Main Ingredients- Seomcho Spinach 250g
- Red Chili Pepper 1/2
- Leek (white part only) 1 stalk
Miso Dressing- Miso paste 1 Tbsp
- Mirin (sweet rice wine) 1/2 Tbsp
- Plum extract 1 Tbsp
- Anchovy sauce 1 Tbsp
- Minced garlic 1 Tbsp
- Sesame seeds, a pinch
- Sesame oil, a pinch

Cooking Instructions
Step 1
First, rinse the spinach thoroughly under running water to remove any dirt or impurities. Trim off the root ends and any wilted or damaged leaves. Gently shake off excess water.

Place the prepared spinach into a pot. Cover with a lid and steam for just 1 minute using the spinach’s natural moisture. This method is key to preserving the fresh flavor and nutrients of the spinach.

Immediately transfer the steamed spinach to a bowl of cold water to quickly cool it down. This step helps to maintain the spinach’s crisp texture. This steaming method is fantastic because it minimizes nutrient loss and saves you the time of boiling water!

Thinly slice the red chili pepper after removing the seeds. Slice the white part of the leek thinly as well. These will add a lovely color and aromatic quality to the salad.

Now, let’s prepare the delicious miso dressing. In a small bowl, combine 1 Tbsp miso paste, 1/2 Tbsp mirin, 1 Tbsp plum extract, 1 Tbsp anchovy sauce, and 1 Tbsp minced garlic. Mix well. Finally, add a pinch of sesame seeds and a dash of sesame oil, stirring to combine into a smooth dressing.

Gently squeeze out excess water from the cooled spinach. Place the spinach in a mixing bowl and add the prepared miso dressing. Toss gently to coat the spinach evenly.
