Savory Spam Kimchi Fried Rice

Whip up a simple yet satisfying meal with ingredients from your fridge! This delicious Spam Kimchi Fried Rice is easy to make and perfect for any meal. The tangy kimchi, savory spam, and rich butter create an unforgettable flavor.
Core Ingredients- 1 serving of well-fermented kimchi (chopped)
- Spam, about 100g (cut into bite-sized pieces)
- Green onion, about 1/4 stalk (chopped)
- 1/2 Tbsp butter
- Pinch of black pepper
- 1/2 Tbsp oligodang (corn syrup) or sugar (adjust to taste)
- 1 Tbsp oyster sauce (for enhanced umami)
Cooking Instructions
Step 1
First, rinse the well-fermented kimchi under running water briefly to remove excess liquid. Then, chop it into bite-sized pieces, about 1cm wide. If your kimchi is too sour, you can add a tiny pinch of sugar.

Chop the green onion and cut the Spam into similar-sized pieces as the kimchi, either diced or cut into strips. Melt 1/2 tablespoon of butter in a pan over medium-low heat. Add the chopped green onion and Spam, and stir-fry.

As the butter melts, you’ll notice the fragrant aroma of green onions and Spam. Stir occasionally for about 1-2 minutes, making sure not to burn them. It’s good to cook until the Spam releases some of its natural oils.
Step 4
Now, add the chopped kimchi to the pan and stir-fry it with the other ingredients. Sprinkle in the black pepper, add 1 tablespoon of oyster sauce, and 1/2 tablespoon of oligodang (or sugar) to season.
Step 5
Continue to stir-fry over medium heat for about 3-4 minutes, allowing the kimchi to soften and the seasonings to meld with the ingredients. This helps to evaporate excess moisture from the kimchi, creating a nicely textured fried rice. Taste as you cook and add a little more oyster sauce or salt if needed.

Add one bowl of warm cooked rice to the pan with the well-stir-fried kimchi and Spam. Use a spatula to gently break up any clumps of rice and mix everything together until the grains are evenly coated with the seasoned mixture.
Step 7
Stir-fry for another 2-3 minutes until the rice grains are separated and well-combined with the savory mixture. Your delicious Spam Kimchi Fried Rice is ready! For an extra treat, serve with a fried egg, crumbled seaweed (gim), or a drizzle of sesame oil.
