Main Ingredients
  • 1 Eggplant: medium-sized
  • 1/4 can Spam: slice into 1cm thick pieces
  • 1/8 head Kimchi: use well-fermented kimchi
  • A small bunch of Bok Choy
  • A little Green Onion: thinly sliced
  • 1 Imitation Crab Stick: shred or slice lengthwise

Seasoning Ingredients
  • 1 Tbsp Raw Sugar (or granulated sugar)
  • 1 Tbsp Perilla Oil (Deulgireum)
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, wash the eggplant thoroughly, remove the stem, and slice it lengthwise into about 1cm thick pieces. Try to slice them to a moderate thickness so they don’t fall apart while stir-frying.

Step 2

Next, discard some of the kimchi stuffing from the well-fermented kimchi and slice it lengthwise, similar to the eggplant. You can also shred or slice the imitation crab stick into bite-sized pieces.

Step 3

Slice the Spam into 1cm thick pieces. Lightly grease a pan with cooking oil and stir-fry the Spam until golden brown. Spam releases quite a bit of fat, so you don’t need to add too much oil.

Step 4

Once the Spam is nicely browned, add the sliced eggplant and kimchi, and stir-fry them together. Add the bok choy and chopped green onions, and stir-fry until the vegetables soften slightly. Stir-frying over high heat will help maintain the crisp texture of the vegetables.

Step 5

When the ingredients are mostly cooked, add 1 tablespoon of raw sugar (or granulated sugar) and stir-fry until evenly coated. The sugar will caramelize and add a wonderful savory depth. Just before turning off the heat, drizzle in 1 tablespoon of perilla oil and sprinkle with 1 tablespoon of toasted sesame seeds to finish.

Step 6
