This savory soybean paste and chives rice bowl is incredibly delicious when mixed with rice! ^^ It’s a simple yet satisfying meal, perfect for when you don’t have much appetite. Topping it over warm rice doubles the flavor.
Main Ingredients- 1/2 cup ground beef (approx. 70g)
- 1/2 medium onion (approx. 60g)
- 4 shiitake mushrooms (approx. 40g)
- 1/3 medium zucchini (approx. 50g)
- 1 stalk green onion (approx. 50g)
- 2 handfuls chives (approx. 60g)
Seasoning- 1 Tbsp minced garlic
- 2 Tbsp soybean paste (doenjang) (approx. 40g)
- 1 Tbsp red pepper paste (gochujang) (approx. 20g)
- 1/2 Tbsp red pepper flakes (gochugaru) (approx. 5g)
- 1/3 Tbsp sugar (approx. 3g)
- 2/3 cup water (approx. 130ml)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp minced garlic
- 2 Tbsp soybean paste (doenjang) (approx. 40g)
- 1 Tbsp red pepper paste (gochujang) (approx. 20g)
- 1/2 Tbsp red pepper flakes (gochugaru) (approx. 5g)
- 1/3 Tbsp sugar (approx. 3g)
- 2/3 cup water (approx. 130ml)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Finely dice the onion, shiitake mushrooms, and zucchini into about 0.5cm pieces. Chop the green onion finely. Lightly pat the ground beef dry with paper towels and season it with a pinch of salt and pepper. Preparing the ingredients in advance will make the cooking process much smoother.

Now, let’s make the delicious soybean paste sauce. In a bowl, combine 2 Tbsp soybean paste, 1 Tbsp red pepper paste, 1/2 Tbsp red pepper flakes, and 1/3 Tbsp sugar. Mix them well. The ratio of soybean paste to red pepper paste is important, so feel free to adjust it to your preference. Sugar adds a touch of umami.

Heat a pan over medium heat and add 1 Tbsp of cooking oil. Add the prepared onion, seasoned ground beef, and 1 Tbsp of minced garlic, and stir-fry. Break up the ground beef with a spatula as it cooks to prevent clumping. Sauté until the onion becomes translucent and the beef is browned.

Once the beef is partially cooked, add the finely diced shiitake mushrooms and zucchini. Stir-fry them together for about 2-3 minutes until the vegetables soften and release some moisture. It’s important to maintain medium heat to prevent the vegetables from becoming mushy.

Add all the prepared soybean paste sauce to the pan and stir well to combine with the ingredients. Be careful not to burn the sauce by adjusting the heat. Sauté for about 1 minute, allowing the sauce to coat the ingredients evenly.

Now, pour in 2/3 cup (approx. 130ml) of water and let it simmer, stirring occasionally, until the sauce thickens to a stew-like consistency. Cooking it down like this develops the rich flavor of the soybean paste.

Finally, add the chopped green onions and stir-fry quickly over high heat for just a moment. The pungent aroma and crisp texture of the green onions will enhance the flavor. Don’t overcook the green onions; a quick stir is all that’s needed.
