Savory Soybean Okara Pancakes (Kongbiji Jeon)
The Irresistible Charm of Soybean Okara Pancakes, Even Tastier Than Mung Bean Pancakes!

I’m using frozen soybean okara that I received for free from a homemade tofu shop. I was craving savory pancakes with a hint of nutty oil, so I decided to make these kongbiji jeon. I love mung bean pancakes, but these soybean okara pancakes are just as delicious and have a wonderfully creamy texture.
Main Ingredients- 150g ground pork
- 80g soybean okara (kongbiji)
- 150g kimchi
- 1/4 onion
- 2 eggs
Batter Ingredients- 100ml water
- 3 Tbsp cake flour
- 100ml water
- 3 Tbsp cake flour
Cooking Instructions
Step 1
First, check your freezer and take out the ingredients. I’m preparing one pack of frozen soybean okara and ground pork. I’ve also prepared well-fermented kimchi and some leftover vegetables (onion) that I have on hand.

Step 2
Finely chop the kimchi. If you chop it too coarsely, the cooking time can vary, so try to cut it as uniformly as possible.

Place the finely chopped kimchi into a large bowl. Make sure to leave enough space for mixing with the other ingredients.

Finely mince the onion. Adding minced onion enhances the flavor of the pancake and improves its texture.

Add the minced onion, soybean okara, and ground pork to the bowl with the kimchi. Mix everything thoroughly using a spatula or your hands. Knead the mixture to ensure all ingredients are well combined.

Step 6
To bind the ingredients and achieve the right consistency, crack in two eggs. Eggs act as a binder, helping everything stick together.

Step 7
Now it’s time to add the batter ingredients that will help the pancakes cook well and give them a chewy texture. First, measure out 100ml of water and pour it into the bowl.

Add three tablespoons of cake flour. Cake flour helps create a softer and crispier pancake.

Step 9
Heat a pan with a generous amount of cooking oil. Ladle portions of the batter onto the hot pan, forming round pancakes of your desired size. Avoid making them too thick so they cook through evenly.

Step 10
Once one side is golden brown, carefully flip the pancake with a spatula to cook the other side. Keep the heat on medium-low to cook gently. Since there’s ground pork, it’s important to cook them long enough for the inside to be fully cooked.

Step 11
Your delicious soybean okara pancakes are ready! This recipe yields about three batches of pancakes. They are best enjoyed immediately while warm.
