Kid-Favorite Soy Sauce Braised Pork Ribs (Jjok Galbi) Made Easy with All-Purpose Soy Sauce

I recently made these delicious soy sauce-braised pork ribs, a favorite among children, using my homemade all-purpose savory soy sauce. My kids call them ‘jjok galbi’ and love them because they’re so fun to eat! The best part? You just marinate the ribs overnight in the all-purpose sauce and then simmer them the next day. Let’s make this simple yet flavorful braised pork rib dish together!

Main Ingredients
  • Pork back ribs 900g (approx. 2 packs)

Braising Sauce
  • All-purpose savory soy sauce 4.5 Tbsp
  • Oligosaccharide (or corn syrup) 2 Tbsp
  • Black pepper to taste
  • Minced garlic 1 Tbsp
  • Ginger wine (or cooking sake with ginger) 2 Tbsp
  • Pear beverage 1 cup (approx. 200ml)

Cooking Instructions

Step 1

I bought two packs of fresh pork back ribs from the grocery store. Each pack weighs about 440-450g, so two packs come out to roughly 900g, a generous portion.

Step 2

Rinse the pork ribs thoroughly under cold running water to remove any blood impurities. Gently trim off any excess fat or sinew. Cutting the ribs into manageable, individual pieces will make them easier to eat later.

Step 3

Now, let’s prepare the delicious marinade. My all-purpose soy sauce already contains a good balance of flavors, but we’ll add a few more ingredients for an even better taste. First, lightly season the ribs with black pepper to eliminate any gamey smell. Then, add 4.5 tablespoons of the all-purpose soy sauce and 1 tablespoon of minced garlic. For a touch of sweetness that kids love, add 2 tablespoons of oligosaccharide (or corn syrup).

Step 4

Last week, I found fresh ginger at the market and made my own ginger wine. I’m adding 2 tablespoons of this homemade ginger wine to the marinade, which will help tenderize the meat and add a subtle aroma. If you don’t have homemade ginger wine, store-bought is perfectly fine.

Step 5

It’s well-known that adding pear to meat dishes makes them more tender and flavorful. Instead of fresh pear, I’m using a sweet and refreshing pear beverage. Adding about 1 cup (200ml) of pear beverage will ensure the ribs become incredibly moist and delicious as they braise.

Step 6

Finally, drizzle in a little sesame oil for nutty fragrance. Then, using your hands, thoroughly mix all the ingredients with the ribs, ensuring every piece is well-coated. Cover the bowl with plastic wrap and refrigerate overnight to marinate. This overnight marination allows the flavors to penetrate deeply into the meat, resulting in a much tastier dish.

Step 7

The next day, transfer the marinated ribs into a heavy-bottomed pot (like a Dutch oven) and bring to a boil over high heat. (Using a pressure cooker can significantly reduce cooking time and make the ribs even more tender!)

Step 8

Once boiling, reduce the heat to medium-low. Stir occasionally to prevent sticking and ensure even cooking as the ribs simmer and the sauce reduces. I simmered mine for about 30-40 minutes in the Dutch oven, allowing the flavors to meld beautifully. Continue to simmer until the sauce thickens to a glaze and coats the ribs nicely.

Step 9

Hearing the delicious aroma, my son came running, hungry! So, I plated up some of the perfectly braised ribs for him first. Look at that beautiful glaze – it’s truly mouthwatering!
