  • Shredded beef 50g
  • Dried wood ear mushroom 1 piece
  • Cheongyang chili pepper 1 piece
  • Egg 1 piece

Beef Marinade & Vegetable Seasoning
  • Soy sauce 1 tsp
  • Sugar 1/2 tsp
  • Minced garlic a pinch
  • Sesame oil a pinch
  • Sesame seeds a pinch
  • Black pepper powder a pinch

Cooking Instructions

Step 1

To begin, prepare your ingredients. Lightly beat the egg in a bowl. Rehydrate the dried wood ear mushroom by soaking it in warm water for about 15-20 minutes until softened. Thinly julienne the Cheongyang chili pepper. Having all your ingredients prepped will make the cooking process much smoother.

Step 2

Pour the beaten egg thinly into a non-stick pan over low heat to make an egg crepe or omelet. Cooking slowly over low heat ensures it won’t burn and will result in a beautiful yellow sheet. Let the cooked egg crepe cool slightly.

Step 3

Lightly stir-fry the julienned Cheongyang chili pepper in a pan. Avoid overcooking; just sauté it briefly until it slightly softens to maintain its crispness and aroma. This prevents the spiciness from becoming overwhelming.

Step 4

Once the wood ear mushroom is rehydrated, tear it into thin, bite-sized pieces by hand. Lightly sauté these pieces in a pan with a touch of soy sauce and sesame oil. This enhances their flavor and adds a savory depth.

Step 5

Now, let’s stir-fry the beef. In a bowl, combine the shredded beef with 1 tsp soy sauce, 1/2 tsp sugar, a pinch of minced garlic, black pepper, sesame oil, and sesame seeds. Gently mix to marinate. Then, stir-fry the marinated beef in a pan over high heat until it’s thoroughly cooked and all the moisture has evaporated. Cooking it until dry prevents it from clumping and ensures a good texture.

Step 6

Slice the cooled egg crepe into thin julienne strips. Preparing all components separately allows for a visually appealing and delicious final presentation.

Step 7

In a large mixing bowl, combine the sauce ingredients: 1 Tbsp soy sauce, 1/2 Tbsp sugar, 1/2 tsp black pepper powder, 1/2 tsp sesame seeds, and 1/2 tsp sesame oil. Whisk well until thoroughly mixed. Making the sauce in advance allows the flavors to meld together nicely.

Step 8

Cook the somyeon noodles according to package directions until al dente. Drain them and rinse under cold water to stop the cooking process and remove excess starch. Add the drained noodles to the large bowl with the prepared sauce and toss gently to coat evenly. Top the mixed noodles with the stir-fried beef, sautéed Cheongyang chili pepper, and wood ear mushroom. Finally, garnish with the julienned egg crepe. Your delicious Soy Sauce Bibim Guksu is now ready to be enjoyed!
