Cooking Instructions
Step 1
Let’s make ‘Gyeran Jang Jorim’ (soy-braised eggs), a nutritious and affordable side dish! These eggs are wonderfully chewy, moist, and tender, with a sweet and salty marinade that seeps into every bite, making them incredibly delicious. While simple to prepare, they’re perfect for a week’s worth of side dishes or for kids’ meals. For a child-friendly version, simply omit the spicy green chilies.
Step 2
Before you begin making the soy-marinated eggs, take the eggs out of the refrigerator about 30 minutes in advance to let them come to room temperature. This temperature difference helps prevent the eggshells from cracking easily when boiling. Also, prepare all the vegetables that will go into the marinade.
Step 3
Wash the eggs thoroughly under running water. For extra peace of mind, you can soak them in a mixture of 1 tablespoon of vinegar and water for 5 minutes, then rinse again under running water. Especially in hot and humid weather, it’s crucial to wash eggs properly and to wash your hands thoroughly after handling them to prevent foodborne illnesses like Salmonella.
Step 4
Prepare the vegetables that will enhance the flavor of the marinated eggs. Finely mince the green onion, green chili, and red chili after washing and drying them. Dice the onion into similar small pieces. These chopped vegetables will add depth and richness to the marinade.
Step 5
Here’s the secret to perfectly boiled eggs! Bring a pot of water to a rolling boil. Once boiling, carefully lower the eggs into the water using a ladle or a sieve. This gentle method helps prevent the shells from cracking. Boil for 7-8 minutes for a perfectly jammy yolk. If you prefer hard-boiled eggs, cook for 10-12 minutes.
Step 6
Immediately after boiling, transfer the eggs to a bowl of cold water to quickly cool them down. This stops the cooking process, ensuring a moist interior. Once cooled, peel the eggs. A helpful tip: adding 0.5 tablespoon of coarse salt to the boiling water or shocking the eggs in cold water right after boiling makes peeling much easier. These eggs peeled like a dream!
Step 7
Let’s prepare a flavorful kelp broth. Soak a piece of dried kelp in cold water for about 30 minutes. This creates a clear and refreshing base for the marinade. In a bowl, combine 200ml of this kelp broth with 3/4 cup (about 135ml) of soy sauce.
Step 8
To the soy sauce mixture, add 50ml of mirin, 2 tablespoons of oligodang, and 1 tablespoon of sugar to create the sweet and savory marinade. You can adjust the sweetness by modifying the amount of oligodang or sugar to your preference. Stir everything well until combined.
Step 9
Add the peeled boiled eggs to the prepared marinade. Generously top with the minced onion, green onion, green chili, and red chili. Your delicious soy-marinated eggs, ‘Gyeran Jang,’ are now complete! Doesn’t it look appetizing with all those colorful vegetables?
Step 10
Transfer the finished Gyeran Jang to an airtight container and refrigerate. While it’s tasty to eat right away, the flavors meld and deepen beautifully if you let it marinate in the refrigerator overnight. We recommend letting it sit for at least 6 hours for optimal flavor.
Step 11
The next day, tasting it reveals a perfectly balanced marinade that isn’t too salty and is wonderfully delicious! The egg yolks are still wonderfully jammy, and the soy marinade pairs perfectly with rice.
Step 12
Having this Gyeran Jang prepared makes for a reassuring and hearty side dish. Make your meals more abundant with this easy-to-make, yet incredibly satisfying ‘Soy-Marinated Egg’ side dish that can last you for about a week!
