Main Ingredients

  • Pork shoulder 600g (cut into bite-sized pieces)
  • Onion 1/3 (thinly sliced)
  • Carrot 1/5 (thinly sliced)
  • Cheongyang chili peppers 2 (finely chopped, adjust to your spice preference)
  • Napa cabbage 2 leaves (cut into large pieces)
  • Perilla leaves 10 (washed and cut into 2-3 pieces)

Sweet & Salty Soy Marinade

  • Soy sauce 5 Tbsp (adjust based on saltiness)
  • Cooking wine (Mirin) 2 Tbsp (helps remove pork odor)
  • Minced garlic 2 Tbsp (add more if you love garlic flavor)
  • Minced ginger 0.5 Tbsp (optional, but enhances aroma)
  • Sugar 2 Tbsp (adjust sweetness to your liking)
  • Black pepper to taste

Cooking Instructions

Step 1

First, wash and prepare all your vegetables: thinly slice the onion and carrot, finely chop the Cheongyang chili peppers, cut the napa cabbage into large pieces, and wash and cut the perilla leaves into 2-3 pieces. Lightly rinse the pork under running water and pat it dry.

Now, let’s make the delicious marinade! In a bowl, combine 5 Tbsp soy sauce, 2 Tbsp cooking wine (mirin), 2 Tbsp minced garlic, 0.5 Tbsp minced ginger, 2 Tbsp sugar, and a pinch of black pepper. Mix well. (Tip: Adding 1-2 Tbsp of pear juice will make the pork exceptionally tender and add a wonderful sweetness and depth of flavor!)

Add the rinsed pork to the prepared marinade and mix gently with your hands, ensuring each piece is well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld. For an even richer taste, marinate for about an hour if time permits.

Heat a pan over medium-high heat and add the marinated pork. Stir-fry until the pork is browned and slightly glistening. Once the pork is cooked, add the sliced vegetables (onion, carrot, napa cabbage) and continue to stir-fry for another 2-3 minutes until the vegetables are slightly softened. Finally, toss in the cut perilla leaves and Cheongyang chili peppers and stir briefly. Your flavorful soy-glazed Jeyuk Bokkeum is ready to be enjoyed! Serve hot and savor the deliciousness.
