Peel and cut the 3 medium potatoes into bite-sized cubes, about 2-3 cm (1 inch) in size. Aim for uniform pieces so they cook evenly. Avoid cutting them too small, as they might break apart during cooking.

Rinse the cut potatoes thoroughly under cold running water. This step helps remove excess starch from the surface of the potatoes, resulting in a cleaner and glossier finished dish.

Fill a pot with enough water to cover the potatoes and add a pinch of salt. Bring the water to a boil, then add the potatoes. Parboil them for about 5-7 minutes until they are slightly tender but still hold their shape. They shouldn’t be fully cooked at this stage, as they will continue to cook in the sauce.
