Ingredients
  • Pork belly 600g
  • Water 100ml (approx. 1/2 cup)
  • Soy sauce 3 Tbsp
  • Oyster sauce 1 Tbsp
  • Mirin (cooking wine) 1 Tbsp
  • Sugar 1 Tbsp
  • Oligosaccharide (or corn syrup) 1 Tbsp
  • Minced garlic 1/2 Tbsp
  • Sesame oil 1 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Step 1

Pat the pork belly dry with paper towels to remove any excess moisture. This step helps reduce any gamey odors.

Step 2

In a bowl, combine soy sauce (3 Tbsp), oyster sauce (1 Tbsp), mirin (1 Tbsp), sugar (1 Tbsp), oligosaccharide (1 Tbsp), minced garlic (1/2 Tbsp), sesame oil (1 Tbsp), and a pinch of black pepper. Stir well until the sugar is dissolved to create the savory glaze.

Step 3

Add water (100ml or about 1/2 cup) to the prepared sauce mixture and stir to combine. This will help prevent the sauce from burning and ensure it coats the pork belly evenly.

Step 4

Heat a pan over medium-high heat. Place the pork belly in the hot pan and begin to sear. As the pork cooks, use paper towels to absorb any rendered fat or impurities that come to the surface. This technique ensures a cleaner final dish.

Step 5

Sear the pork belly on both sides until it’s lightly golden and some of the fat has rendered out. You don’t need to cook it completely through at this stage, as it will continue to cook and braise in the sauce.

Pour half of the prepared soy sauce mixture over the pork belly in the pan. If your pan is too small, you can cook the pork belly in batches, adding the sauce accordingly. Continue to cook, turning the pork occasionally, allowing the sauce to reduce and coat the meat.

Continue to cook and simmer the pork belly in the glaze until the sauce thickens, caramelizes, and coats the pork beautifully, creating a delightful sweet and savory flavor. Once done, cut the pork belly into bite-sized pieces for easy serving. This dish is a crowd-pleaser, perfect for any meal!
