We’ve grilled tender chicken thighs coated in a savory soy-based glaze until golden brown and delicious. These are perfect as a side dish for meals, or served over steamed rice for a satisfying rice bowl. This dish is a hit with both babies and adults!

Main Ingredients

  • 500g boneless, skinless chicken thighs (skin removal recommended)
  • A small amount of green onion (optional, for enhanced flavor)

Soy Glaze

  • 2 Tbsp soy sauce
  • 1 Tbsp mirin (or cooking sake)
  • 1 Tbsp oligosaccharide (or corn syrup, honey)
  • 0.5 Tbsp minced garlic (approx. 1/2 tsp)
  • A pinch of black pepper

Cooking Instructions

Step 1

Prepare the chicken thighs by rinsing them thoroughly under cold water. While leaving the skin on is optional, removing it can result in a cleaner taste. Ensure they are clean.

To eliminate any gamey odor, soak the chicken thighs in milk for about 30 minutes. This step also helps to tenderize the meat.

Let’s make the delicious soy glaze. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp oligosaccharide, and 0.5 Tbsp minced garlic. Mix well until thoroughly combined. Finish with a pinch of black pepper.

Remove the chicken thighs from the milk soak and rinse them lightly under cold water to wash off the milk. Then, pat the chicken thighs completely dry with paper towels. Ensuring the chicken is dry allows the marinade to adhere better and results in a tastier grilled product.

Add the prepared soy glaze to the dried chicken thighs and toss to coat evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour. For an even deeper flavor, marinate for 2-3 hours if time allows.

Heat a pan over medium-low heat. Place the marinated chicken thighs in the pan, ensuring the glazed side faces down. Grill for about 7-8 minutes, or until nicely browned and caramelized.

Flip the chicken thighs and grill the other side for another 7-8 minutes over medium-low heat, or until fully cooked through. At this stage, you can also add vegetables like chopped green onions or whole garlic cloves to the pan to grill alongside the chicken for added flavor.
