- 1/2 soju cup sugar or corn syrup (approx. 40ml)
- 1 Tbsp minced garlic
- A portion of chopped green onions
- 1/2 tsp black pepper
Cooking Instructions
Step 1
Prepare the main ingredients: 3 pieces of boneless chicken thigh and 1 piece of chicken breast. Also, have a handful of glass noodles for a chewy texture and 1/2 cup of canned corn for a touch of sweetness.
Step 2
Let’s make the flavorful sauce! Measure out 2/3 soju cup of soy sauce (approx. 50ml) and 1/2 soju cup of sugar or corn syrup (approx. 40ml). Prepare 1 Tbsp of minced garlic, some chopped green onions, and 1/2 tsp of black pepper. (Note: The original pepper amount was 1 tsp, but 1/2 tsp is more typical for this type of dish.)
Step 3
Start by rehydrating the glass noodles. Place the dried noodles in a bowl and pour boiling water over them until they are fully submerged. Let them soak for about 10 to 15 minutes until pliable. This ensures they cook perfectly in the stew.
Step 4
This step is optional but recommended for extra tender chicken and better flavor absorption. Make a shallow cut near the bone on the lower part of the chicken thigh. Then, make a lengthwise cut into the inner flesh. This helps to separate the meat from the bone. Hold the bottom part of the thigh and gently pull the meat upwards with the back of your knife, separating it completely. This technique allows the sauce to penetrate deeper into the meat.
Step 5
Cut the prepared chicken thigh and breast into bite-sized pieces. Making them a uniform, manageable size will make them easier to eat, especially for children.
Step 6
To remove any impurities and ensure a tender texture, briefly blanch the chicken. Bring a pot of water to a boil, add the cut chicken pieces, and cook for 1 to 2 minutes. Immediately drain the chicken and rinse it under cold water.
Step 7
In a bowl, combine all the sauce ingredients: 2/3 soju cup soy sauce, 1/2 soju cup sugar or corn syrup, 1 Tbsp minced garlic, and 1/2 tsp black pepper. Whisk them together until well combined to create a delicious savory sauce.
Step 8
In a pot, add enough water to cover the chicken. Add the blanched chicken and the prepared sauce. Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for about 20 minutes, or until the chicken is tender.
Step 9
After 20 minutes of simmering, add the soaked glass noodles and the canned corn to the pot. The green onions will add a fresh aroma and flavor.
Step 10
Continue to cook for another 10 minutes. This allows the glass noodles to cook through completely and for all the ingredients to meld together. Ensure the noodles don’t become mushy; cook just until tender.
Step 11
Once all the ingredients are cooked and the flavors have melded, transfer the savory soy-glazed chicken stew to a serving dish. It’s ready to be enjoyed with a side of hot steamed rice! Enjoy this delicious meal with your family.
