Main Ingredients
  • 1 block Firm Tofu (approx. 300g)
  • 1 stalk Green Onion (about 15cm long)

Tofu Seasoning
  • Pinch of Salt
  • Pinch of Black Pepper

Savory Soy Glaze
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Mirin (or cooking sake)
  • 1 Tbsp Minced Garlic
  • 3 Tbsp Water
  • 1 Tbsp Sugar
  • 1 Tbsp Corn Syrup (or Oligosaccharide)
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

First, gently rinse the tofu under running water, then slice it into bite-sized pieces, about 1.5cm thick. Prepare the green onion by washing it and finely slicing it into small rounds. All your ingredients are now ready!

Step 2

Use kitchen towels to firmly press and remove excess moisture from both sides of the sliced tofu. Removing the water properly will prevent oil splattering when frying and help the tofu hold its shape. For seasoning, lightly sprinkle a pinch of salt and pepper over the tofu to let the flavors penetrate.

Step 3

While the tofu is seasoning, let’s prepare the delicious soy glaze. In a deep bowl, combine 4 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp minced garlic, 3 Tbsp water, 1 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp sesame oil. Mix them well. Finally, add a pinch of black pepper and a pinch of toasted sesame seeds for extra aroma to complete your savory soy tofu glaze.

Step 4

Heat about 1-2 Tbsp of cooking oil in a frying pan over medium heat. Carefully place the seasoned tofu pieces in a single layer. Fry them slowly until both sides are golden brown and appetizingly colored. This frying step slightly firms up the tofu’s exterior, making it perfect for absorbing the braising sauce. Once golden, temporarily transfer the fried tofu to a plate.

Step 5

In the same pan used for frying the tofu, add the sliced green onions and sauté briefly until fragrant. Once the aroma of the green onions is released, return the fried tofu pieces to the pan in an organized manner. Pour the entire prepared soy glaze evenly over the tofu.

Step 6

Now, reduce the heat to medium and let the tofu simmer, allowing the glaze to penetrate deeply. Gently braise the tofu so it absorbs the delicious sauce.

Step 7

During the simmering process, gently flip the tofu 1-2 times with a spatula. This ensures that the soy glaze evenly coats and seeps into every part of the tofu, creating a more flavorful dish. Continue simmering while keeping a moderate amount of glaze visible in the pan.

Step 8

Continue to simmer over medium heat. Eventually, the soy glaze will reduce significantly, coating the tofu with a beautiful sheen. Once the sauce has almost completely evaporated and the tofu is moistly coated, turn off the heat and serve. Enjoy your delicious soy-braised tofu with a side of warm rice!
