Hello everyone! Today, I’ll share an easy and detailed recipe for ‘Soy-Braised Potatoes,’ a dish that’s irresistibly delicious and loved by all ages. With this recipe, you’ll achieve perfectly firm, glossy, and flavorful braised potatoes. Let’s get started!

First, peel the potatoes and cut them into large cubes (about 2-3 cm or 1 inch). Cutting them too small can cause them to break apart during cooking, so maintaining a good size is key. Slice the onion thinly and chop the chili peppers. If you prefer a spicier kick, feel free to use Korean red chili peppers (cheongyang peppers).

Now, heat a frying pan over medium heat and add 2 tablespoons of cooking oil. Once the pan is sufficiently hot, add the cubed potatoes and begin to stir-fry them.

As you stir-fry, ensure the potatoes are evenly coated with oil. Continue to cook until the surface of the potatoes starts to look slightly translucent (about 5-7 minutes). This step helps the exterior of the potatoes to cook slightly, maintaining their shape.

When the potatoes are about one-third cooked and appear translucent, carefully pour in 1/3 cup of water (approximately 70ml). Add 2 tablespoons of soy sauce, 1 teaspoon of oligosaccharide, and 1 teaspoon of sesame seeds. Stir well to combine the seasoning. Reduce the heat to medium-low and let it simmer until the potatoes are cooked through.

Once the potatoes are almost fully cooked and look translucent (about halfway done), add the sliced onions and chopped chili peppers to the pan. Continue to stir-fry together for another 2-3 minutes until the onions are translucent and the sauce has thickened slightly, allowing the potatoes to absorb the flavors. Taste and add a little more soy sauce if needed.
