  • 3 Tbsp Soy sauce
  • 1 Tbsp Plum extract (Maesil-cheong)
  • 1/2 Tbsp Ginger syrup
  • 1 Tbsp Cooking wine (Mirin/Cheongju)
  • 2 Tbsp Water
  • 1 tsp Sesame oil (optional)

Slice the king oyster mushrooms into round, bite-sized pieces, about 1 cm thick. Cutting them in a circular shape makes them more appealing to eat.

Using pre-baked eggs from the store makes this recipe even easier. Peel the shells off the baked eggs and then cut each egg into 4 wedges. The firm texture of the baked egg complements the braising liquid beautifully.

In a small pot, combine the soy sauce, plum extract, ginger syrup, cooking wine, and water. Bring the mixture to a rolling boil over medium-high heat to create the braising sauce. Stir occasionally as it boils to ensure the ingredients are well mixed.

Once the sauce is boiling, add the sliced king oyster mushrooms first. Gently stir them to coat with the sauce and let them simmer for about 2-3 minutes. Braising the mushrooms first will help tenderize them and allow them to absorb the flavors.
