We’ll be stir-frying flavorful smoked duck with garlic until golden brown, and pairing it with a quick and easy fresh chive salad. The combination of salty smoked duck and crisp, refreshing chives is a perfect palate-pleaser for a satisfying meal.

Smoked Duck Stir-fry
  • Smoked duck slices, 200g
  • Whole garlic cloves, 10

Quick Chive Salad
  • Prepared chives, 200g
  • Olive oil, 2 Tbsp
  • Cooking wine (Mirin), 2 Tbsp
  • Fish sauce (Kkanari aekjeot), 2 Tbsp
  • Oligosaccharide (or corn syrup), 2 Tbsp
  • Red pepper flakes (Gochugaru), 1 Tbsp
  • Minced garlic, 1 Tbsp
  • Sesame seeds (ground), 1 Tbsp

Cooking Instructions

Step 1

First, prepare the fresh chives. If you’d like to add extra fragrance, you can include a few young kale leaves. (If kale is unavailable, the chives alone will be delicious!)

Step 2

Cut the prepared chives into manageable lengths of about 3-4 cm. If using kale, julienne it into thin strips similar in length to the chives.

Step 3

Place the cut chives and julienned kale (if using) into a large bowl. Gently separate the vegetables so they don’t clump together.

Step 4

Now it’s time to make the dressing for the chive salad. Combine all the measured dressing ingredients.

Step 5

Pour the fish sauce, oligosaccharide, red pepper flakes, cooking wine, minced garlic, and sesame seeds into the bowl with the chives.

Step 6

Gently toss the ingredients with your hands to coat the chives evenly with the dressing. Be careful not to mix too vigorously, as this can make the chives mushy. Gently toss them. If you prefer a tangier flavor, you can add about 1/2 Tbsp of vinegar at this stage.

Step 7

Preheat another pan over medium heat. Add the whole garlic cloves and the smoked duck slices, then stir-fry. The key is to cook slowly so the garlic aroma naturally infuses into the duck.

Step 8

Continue to stir-fry until the smoked duck turns a tempting golden brown. If there’s excessive oil released from the duck, you can carefully blot it with a paper towel for a cleaner dish. (Note: Duck meat is rich in beneficial unsaturated fatty acids, so moderate consumption is very healthy!)
