  • Servings : 2 servings

Main Ingredients

  • Smoked duck 267g
  • Green onion 1/2 stalk
  • Onion 1/2
  • Whole garlic cloves 16
  • Warm cooked rice 2 bowls
  • Vegetable oil 3 Tbsp

Seasoning

  • Oyster sauce 1 Tbsp
  • Buldak sauce 1 Tbsp
  • Corn syrup 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Finely chop half a green onion. Slice the whole garlic cloves thinly (into slivers). This way, their flavors will really come out when stir-fried.

Step 1

Step 2

Finely mince half an onion. Also, finely chop the pack of smoked duck (267g). Chopping the smoked duck into small pieces ensures it blends well with the rice for a better taste.

Step 2

Step 3

Prepare a deep pan or a wok. Add 3 tablespoons of vegetable oil to the pan, then add the chopped green onion. Stir-fry over medium-low heat to gently extract the green onion’s aroma and create ‘scallion oil’. This homemade scallion oil is a secret to boosting the fried rice’s flavor.

Step 3

Step 4

Once the aroma of the green onion starts to fill the air, add the sliced garlic. Stir-fry together, being careful not to burn the garlic. Cook until it’s lightly golden and its fragrance intensifies.

Step 4

Step 5

Now, add the finely chopped smoked duck to the pan and stir-fry. Smoked duck has its own fat, so you don’t need to add extra oil. Cook until the duck’s rendered fat slightly appears and the duck becomes a bit chewy and firm.

Step 5

Step 6

When the smoked duck is cooked and has a slightly chewy texture, it’s time to add the seasonings. First, add 1 tablespoon of oyster sauce for a rich umami flavor.

Step 6

Step 7

Next, add 1 tablespoon of Buldak sauce for a hint of spiciness and depth. You can substitute with another spicy sauce if you prefer.

Step 7

Step 8

Finally, add 1 tablespoon of corn syrup to give the fried rice a nice sheen and balance the overall flavor. Combining these three sauces creates a delicious fried rice seasoning.

Step 8

Step 9

After adding the sauces and mixing well, add the minced onion to the pan and stir-fry together. Cook until the onions become translucent and tender.

Step 9

Step 10

Once the onions are sufficiently cooked, add 2 bowls of warm cooked rice. Use a spatula to gently break up any clumps of rice and stir-fry until everything is well combined with the ingredients. Continue to stir-fry until each grain of rice is coated with the seasoning. Your delicious smoked duck fried rice is now complete!

Step 10

Step 11

The slight spiciness of the finished fried rice cuts through the richness of the smoked duck, making it very enjoyable. Serving it with some tangy, well-fermented kimchi will make it even more delicious without any greasiness. Enjoy your wonderful meal!
