Nutritious and Delicious Seasonal Snack: Siraegi Jangtteok with Health Benefits
Today, we’re making savory pancakes using siraegi (dried radish greens), a beloved ingredient! We’ve prepared a special version by seasoning the siraegi with perilla oil and perilla powder, then adding doenjang (soybean paste) and gochujang (red chili paste) to create a flavorful ‘Jangtteok’ (paste pancake). What better, more nutritious snack could there be for a winter treat!
Ingredients- 150g prepared dried radish greens (siraegi)
- 1 Tbsp perilla oil
- 1 Tbsp perilla seed powder
- 1/2 Tbsp doenjang (Korean soybean paste)
- 1/2 Tbsp gochujang (Korean red chili paste)
- 1 cup flour (or pancake mix)
- 2/3 cup water (approx. 130ml)
- 1 Tbsp perilla oil for frying
- Generous amount of cooking oil
Cooking Instructions
Step 1
First, in a bowl, combine the prepared siraegi with 1 tablespoon of perilla oil and 1 tablespoon of perilla seed powder. Gently massage them together with your hands until the siraegi is well-coated. Let it marinate for a moment to absorb the flavors.
Step 2
Next, add 1/2 tablespoon of doenjang and 1/2 tablespoon of gochujang to the marinated siraegi and mix well. Then, gradually add 1 cup of flour (or pancake mix) and 2/3 cup of water, stirring until you achieve a thick, smooth batter without lumps. The batter should be thick enough to hold its shape but still pourable, similar to pancake batter.
Step 3
Heat a non-stick pan over medium heat. Add 1 tablespoon of perilla oil and a generous amount of cooking oil to coat the pan. Ensure the oil is hot before you start frying the pancakes.
Step 4
Once the pan is hot and oiled, spoon about a tablespoon of the batter onto the pan for each pancake, forming round shapes. Make sure to leave some space between each pancake to prevent them from sticking together. Cook until the bottom side is golden brown and crispy, then carefully flip them over using a spatula. The wonderfully nutty aroma of the cooking pancakes will fill your kitchen. You might find yourself tempted to snack on a couple while they’re still piping hot!
Step 5
Pancakes are always best enjoyed fresh off the pan while they’re still warm! Savor a few as they cook, and then arrange the remaining ones on a serving plate. They are incredibly delicious when served warm.
