Authentic Japanese Pork Ginger Stir-fry (Shogayaki) with a Fresh Scallion Salad Recipe

Shogayaki Main Ingredients- 300g Pork Loin (thinly sliced)
- 2 Tbsp Soy Sauce
- 1 Tbsp Sake (Cooking Wine)
- 1 tsp Ginger Juice (or grated ginger)
- 1 Tbsp Oligosaccharide (or sugar)
- 1 medium Onion
- A little All-purpose Flour (for coating)
- A pinch of Black Pepper (for seasoning)
- 1/4 Onion (julienned)
- A little Ginger (julienned)
Refreshing Scallion Salad Ingredients- 2 stalks Green Onions (mostly white parts)
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp Plum Extract (or sugar)
- 1 Tbsp Vinegar
- 1 tsp Sesame Oil
- A little Toasted Sesame Seeds (for garnish)
- 2 stalks Green Onions (mostly white parts)
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp Plum Extract (or sugar)
- 1 Tbsp Vinegar
- 1 tsp Sesame Oil
- A little Toasted Sesame Seeds (for garnish)
Cooking Instructions
Step 1
First, score the fatty parts of the pork loin about 1cm apart with a knife or scissors. This helps prevent the meat from curling when cooked and allows the sauce to penetrate better.
Step 2
Let’s make the special sauce for Shogayaki! In a small bowl, combine 2 Tbsp soy sauce, 1 Tbsp sake, 1 tsp ginger juice, and 1 Tbsp oligosaccharide. Stir well until the sugar is dissolved.
Step 3
Evenly coat the pork with the prepared Shogayaki sauce. Let it marinate in the refrigerator for about 10 minutes to allow the flavors to fully meld into the meat, making it even more delicious.
Step 4
Lightly dust the marinated pork with a thin layer of all-purpose flour, just enough to coat the surface. This helps prevent the sauce from burning during cooking and adds a tender texture.
Step 5
Prepare the vegetables to be stir-fried with the pork. Thinly julienne the ginger and also thinly julienne the medium-sized onion along its grain.
Step 6
Heat 1-2 Tbsp of olive oil in a pan over medium-low heat. Carefully place the coated pork slices in the pan and cook until golden brown on both sides, being careful not to burn them.
Step 7
While the pork is cooking, gradually add the Shogayaki sauce in 2-3 parts, allowing it to reduce and glaze the meat. This adds shine and deepens the flavor.
Step 8
When the pork is almost cooked through, pour in the remaining Shogayaki sauce. Add the julienned ginger and onion to the pan and stir-fry until the onions become translucent.
Step 9
Now for the scallion salad! Prepare two stalks of green onions. Use the white and light green parts, discard the outer leaves, and fold the tender inner parts into thirds before thinly slicing them. This slicing method enhances the crisp texture.
Step 10
Soak the sliced green onions in cold water for about 5 minutes. This reduces their pungent flavor while keeping them crisp. Squeeze out any excess water thoroughly before mixing.
Step 11
Let’s make the scallion salad dressing! In a bowl, mix 1 Tbsp soy sauce, 1 Tbsp gochugaru, 2 Tbsp plum extract, and 1 Tbsp vinegar until well combined.
Step 12
Add the drained green onion slices to the dressing and gently toss to coat evenly. Be careful not to mix too vigorously, as this can make the scallions mushy.
Step 13
Finally, stir in 1 tsp of sesame oil and a pinch of toasted sesame seeds for garnish. Your delicious scallion salad is ready! Enjoy it with the savory Shogayaki for a delightful meal.
